Beet tops are a delicious veg. Kind of like spinach actually. I never throw them away.

Sure, you are the cook and whatever you want to do is your business and falls under "creative liscence to cook". There is a lot of nutrition in the beet greens, so by all means include them too.

You can use it in the soup but don't serve it with the soup.
