Nacho Cheese Sauce (my favoutite !):
1 pound pasteurized cheese (recommended: Velveeta)
8 ounces shredded Cheddar
8 ounces shredded Monterey jack cheese
1 (14-ounce) can tomatoes with green chilies (recommended: Ro-tel)
1 tomato, diced
1/2 jalapeno pepper, finely diced
1/2 red onion, finely diced
2 green onions, chopped
1/2 teaspoon freshly ground black pepper
1 tablespoon ancho or chipotle (or other) ground chile pepper
Kosher salt
Combine all ingredients in a double boiler and stir until melted. Season with salt, to taste.
Here is the best and easiest recipe for nachos . . . ever!
INGREDIENTS:
1 brick (8 ounces) Cracker Barrel extra sharp cheddar
1 large bag Tostitos Scoops corn chips
1 can regular Ro-Tel tomatoes and green chilies
1 package Oscar-Meyer ready-cooked bacon
PROCEDURE:
1. Turn your oven to broil.
2. Grate the cheddar cheese into a large bowl.
3. Place as many Tostitos Scoops as can fit onto a large cookie sheet.
4. Fill each chip with a teaspoon of grated cheddar cheese.
5. Put one-half to one whole teaspoon of Ro-Tel on top of the grated cheese.
6. Top each nacho with a liberal pinch of the bacon.
7. Place the cookie sheet under the broiler for a minute (or until the cheese is completely melted). Watch these puppies like a hawk. They can incinerate in a matter of seconds.
8. Serve piping hot on a large platter.
1 small block (16oz) of Velveeta mexican cheese.
8oz Chorizo Mexican sausage
1 can Ro-Tel Tomato(juice and all)
Brown Chorizo.
Put Chorizo velveeta and tomato in saucepan and heat slowly until completely melted.
Note- You can control the amount of spice by choosing spicy or mild tomatoes. Also the more Chorizo you add the spicier it will become.
I use a block of Velveeta Mexican cheese, 3 cans of Hormel chili with hot beans, 1 can of nacho cheese soup, a couple pounds of hamburger with onions cooked up in it. Cook the meat and onions, drain off grease, dump it along with everything else into the crock pot, chunk up the Velveeta into smallest pieces possible so will melt faster. And in a few hours you will have a hot dip to put your nacho chips in. Can also add jalapenos or other hot things you might like. Makes a lot, ENJOY! My son just uses the Velveets Mexican cheese & a jar of some kind of chunky taco salsa in the crock pot until all melted and that is very good too.
Whatever you do...do not use Velveeta. Blech. Use real cheese that isn't processed. You'll have the best flavor experience!
