PART 1 ingredients
6 cups rolled oats
1 cup wheat germ
1 cup salted sunflower seeds
1 cup (plus more as you wish) chopped pecans and/or walnuts

4 Tbsp Cinnamon

PART 2 ingredients
cup canola oil
cup honey
cup brown sugar

2 tbsp vanilla

PART 3 ingredients
cup Coconut
1 cup raisins
Assorted chopped dried currants, cranberries, apricots, bananas, dates, papaya, etc. (HINT: you can buy fruit-only trail mix and chop that up)

Preheat oven to 325 degrees. Mix PART 1 ingredients together in a large roasting pan and sprinkle heavily with the cinnamon.

Mix PART 2 ingredients in measuring cup and heat in a microwave for 50 seconds. Before pouring over dry mixture, stir vanilla into oil-honey mixture. Pour over the dry mixture and bake for 40 minutes, stirring every 10 minutes.

After baking, add dried fruit, e.g. raisins, apricots, dates, raspberries.

1 mashed bananna (on the large side)
1/2 cup oil
1/2 cup almonds
3 cups oats
1/2 tsp salt
cinnamon, allspice and pumpkin pie spice to taste (or any combo of this. . I like about 1/2 tsp of each)

Mash bananna, add rest of liquid ingredients, then add in oats and spices. Mix and spread on a non greased cookie sheet. Bake at 325 for like 20 mins, stiring up a few times.

1 cup slivered almonds
1 cup cashews
3/4 cup shredded sweetened coconut
6 tablespoons dark brown sugar
6 tablespoons maple syrup
1/4 cup vegetable oil
3/4 teaspoon salt
1 cup raisins

Preheat oven to 250 degrees F.
In a large bowl, combine the oats, nuts, coconut, and brown sugar.
In a separate bowl, combine maple syrup, oil, and salt.
Combine both mixtures and pour onto 2 sheet pans.
Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.
Remove from oven and transfer into a large bowl.
Add raisins and mix until evenly distributed

I use to make this for a summer camp I cooked for. You may have to cook the oatmeal in two batches unless you have a big roast pan. The units are in boxes mostly because I was too lazy to measure and it came out great anyways.

1 large cylander old fashioned oats
1 stick margarine(not butter, it goes bad faster)
1 teapspoon salt

1 bag sweetened coconut

1 box grape Nuts cereal
1 jar Wheat Germ
1 pound Raisins
Craisins, other dry fruit if desired.

about two cups of honey.

put the oatmeal in a big roasting pan and put the margarine on top. Bake in a 350 degree oven stirring occationally until oatmeal starts to brown and has a nutty smell to it. Watch the corners.

Top with the coconut and bake for about 10 more minutes until it starts to toast.

Combine the rest of the ingredients in a big pot sprayed with PAM (a bowl will be too small) Add in the honey while the mix is still warm and taste for desired sweetness. Let the mix sit for about an hour to let the hney be absorbed.

I like simple recipes: this one is great with milk and will keep for weeks in the refrigerator.

1/4 cup chopped walnuts (I use pecans)
1 cup honey
1/2 cup oil
1/2 teaspoon vanilla extract

1. preheat the oven to 350 degrees. In a large mixing bowl, cmobine the first 4 ingredients.
2. In a 2 quart saucepan, heat the honey, oil and vanilla until syrupy.
3. Add to dry ingredients, mix well. Spread on a jellyroll pan.(or cookie sheet with sides)
4. Bake for 20 min., stirring every 5 min. Store in a covered container.

variations:
add one or more of these, raisins, other chopped nuts, shredded coconut, sesame seeds, and dried cranberry's.

Try different combinations too.
