Does anyone have a recipe for Crunchy Vegetable Burrito Banditoes? I got it from WIC calendar around 2000?!


Question: I got a great recipe from a WIC calendar between 1997 and 2004. I think the name was Crunchy Vegetable Burrito Banditoes. It had broccoli, cauliflower, ranch dressing,carrrots, etc. It was a favorite of my family, but it was lost in a house fire 3 yrs ago. I'd love another copy.

Ingredients
1/2cup shredded carrots 1/2cup chopped broccoli 1/2cup chopped cauliflower, 2 green onions, thinly sliced 4ounces shredded lowfat Cheddar cheese ,1/4cup nonfat ranch salad dressing 1/2teaspoon chili powder, 4 (7-inch) flour tortillas, 1cup torn iceberg lettuce, bite-size pieces.

Directions:
In a mixing bowl, combine carrots, broccoli, cauliflower and onions with cheese, dressing, and chili powder.
Lay tortillas flat on the counter and spoon about 1/2 cup vegetable mixture and 1/4 cup of lettuce down the center. Wrap each tortilla around the vegetable mixture. Serve!
