Pastry, how do I make a pastry lid stick on ceramic dish?!


Question: I'm making a big meat pie just with a pastry lid, no base. I've bought a big ceramic/pot type dish, how do I make the pastry lid stick to the dish and not come off in the oven? It's for a dinner party so I want it to look good! Any tips?

I have had this same problem in the past, my solution was just to tuck the pastry lid in around the top of the meat pie and not attach it to the rim of ceramic pot. When it cooks the crust will expand a little and it will look nice. Be sure to add slits in the top to let steam escape

For more decoration, you can also add a braid or wreath of dough around the outside using cut out leaves or hearts (for valentines day).

Prick the pastry lid to let the expanding air out. Brush egg white around the rim of the dish to make it stick. If I don't get the ten points, I'll settle for a hunk of pie!

Brush with beaten egg.

Fold an inch wide piece of pastry all round the ceramic pot
so that when you go to put your lid on you can press the edge of your lid into the existing pastry,this will stop your pastry from sliding down the dish!Well thats what the missus reckons.

Wipe the dish edge with either milk or better still a little beaten egg. Then pinch the pastry onto the dish
