How can I use egg yolks?!


Question: As a person who works out and eats healthy I consume a lot of egg whites. I don't get packaged egg white products where I live. So I have to throw away most of the egg yolks. Can I make some use out of them? Like make a dish/sauce that can be refrigerated and used later?

Dude i think it will be difficult to suggest a healthy option. As has already been suggested, egg yolks are great for making custard and creme brulee. You can of course freeze the custard to make ice cream although remember to churn regularly on the first freeze to avoid ice crystals; this will keep for ages obviously. I guess another use for them would be to make mayo or aioli. You add a few drops of extra virgin olive oil to the yolk and whisk and keep repeating to emulsify the mixture adding larger amounts later or it will split. You would be looking to add circa 4 oz of oil to yolk at the end. Season and add lemon juice for a nice mayo, add a clove of crushed garlic to tranform to aoili. Should keep for a week and great for dipping veg into.

I would say Hollandaise, but you said you liked eating healthy..

Make banana custard-yummy.Use yolks to make real custard.....

Diced in salads, Hollandaise Sauce, Creme Brulee ....

Use it to put on your hair and then wash/shampoo after 5 minutes. This will make your hair better.

Make custard to give away to people who can eat yolks. Or make custard sauce to pour on ice ream, cakes and French toast.
