Quick dinner help!?!


Question: I am making lemon pepper chicken and I was planning on making garlic mashed potatoes and green beans with it. What do you guys think? or do you have any better suggestions to go with it?

garlic mashed potatoes and green beans always sound good to me. If you wanted- you could substitute a rice pilaf and asparagus. It’s a little lighter and I think it will make the lemon flavor stand out more.

Sounds, good. I would make rice with it only because I'm not big on Mashed potatos.

Heh...works for me. I'm going to have meatless spaghetti & garlic bread; yours sounds MUCH more enticing!

Sounds great. I personally like roasted potatoes with anything! I nuke them a little first after I cut them, season and throw in a pan real quick to crisp. My son would say MASHED SOUNDS PERFECT!

1/4 cup lemon pepper
1 tablespoon dry mustard
1 tablespoon dried rosemary
5 skinless, boneless chicken breast halves
4 cloves garlic, crushed
4 tablespoons fresh lemon juice
3 cups dry white wine

DIRECTIONS
In a small bowl, mix lemon pepper, dry mustard and crushed dried rosemary.
Place chicken breast halves in a medium bowl. Rub with garlic. Introduce the lemon pepper mixture and rub it into the chicken. Pour in lemon juice and dry white wine. Cover and refrigerate at least 3 hours before grilling.
Preheat an outdoor grill for high heat and lightly oil grate.
Cook marinated chicken breasts on the prepared grill until meat is no longer pink and juices run clear, or to desired doneness.

MMmmmm That sounds positively yummy to me. Good choice! Remember it is impossible to add "to much" garlic :oD

Not potatoes. Rice pilaf is a better choice. The lemon blends better with a rice product. Think about it. Lemon potatoes? Nah...

Then with the leftovers, it will be so easy to make soup. Add some broth or stock, celery, carrots and onions. Voila!

Garlic mashed potatoes are always a staple, you can't go wrong. I personally am not a big green beans fan and would suggest considering going with snow peas instead. Below I've included a link to a recipe for Sesame Snow Peas which is one of my favorites.

i would suggest plain mashed potatoes as opposed to garlic. it's a better balance of flavors & potatoes won't compete with lemon pepper on your chicken. if you serve green beans, toss w/ little olive oil & sprinkle w/ kosher salt & roast them in the oven (425 degrees 20-30 minutes). this caramelizes the natural sugar & will compliment your other dishes. if you're looking for an alternative to green beans, roast some asparagus (same way as green beans but only for 15-20 minutes). once you've eaten it this way, you'll never go back. lol

Taters sound GREAT, I always like a little rosemary to flavor the gravy with, but that's just me

Garlic Mash poatoes is a splendid Idea but what I would enjoy on the side possibly a light salad to *lighten the mood.

An alternative to garlic mashed potatoes would be mashed potatoes with cream corn. VERY tasty!!

Maybe a corn dish.
And I would advise if you plan on doing green beans, to get fresh ones instead of the canned ones.
You'll probably have to snap off the ends, but it's definitely worth it because fresh green beans taste 100x better than canned.
