Creamed Peas and Potatoes
INGREDIENTS:
4 medium red potatoes, cubed
1 (10 ounce) package frozen peas
1 teaspoon sugar
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon white pepper
1 1/2 cups milk
2 tablespoons minced fresh dill
DIRECTIONS:
1. Place potatoes in a saucepan; cover with water and cook until tender.
2. Cook peas according to package directions, adding sugar.
3. Meanwhile, melt the butter in a saucepan; add flour, salt and pepper to form a paste. Gradually stir in milk. Bring to a boil; boil for 1 minute. Add dill; cook until thickened and bubbly. Drain potatoes and peas; place in a serving bowl. Pour sauce over and stir to coat. Serve immediately.

I would pick up a roasted chicken - or simply saute some chicken breasts for a lighter main dish. A meatloaf would fit in with the comfort food style of this dish.

A spiral ham, any kind of chicken dish, steaks, a roast, pork chops, any kind of fish. Really, that could go with anything almost!
Oh, and chicken cordon blue, that sounds awesome right now.
Lamb Chops
Serves 4
2 cloves garlic, chopped
2 stalks lemongrass, peeled and thinly sliced crosswise
1 piece fresh ginger (1/2 inch), peeled and chopped
1 teaspoon sea salt
3 tablespoons chopped cilantro leaves
3 tablespoons chopped fresh mint
1/4 cup extra-virgin olive oil
12 lamb rib chops, about 1/2 inch thick
Freshly ground pepper
4 lemon wedges
Directions
Prepare marinade: Place the garlic, lemongrass, ginger, and salt in a mortar. Using a pestle, grind to a rough paste. Add cilantro and mint, and grind 1 minute more. Stir in oil.
Place lamb chops in a shallow dish and pour over marinade; turn lamb to coat. Let stand 1 hour. Preheat a grill pan over high heat. Place lamb on grill and cook, turning once, about 2 minutes per side for medium-rare. Transfer to a plate, cover to keep warm, and let stand in a warm place, about 10 minutes.
Divide lamb evenly between 4 plates. Pour any juices that have accumulated on the plate over lamb. Season with pepper and garnish each plate with a lemon wedge.

Grilled Flank Steak with Bacon Balsamic Glaze Recipe courtesy Robin Miller 2007
Cooking spray
2 tablespoons triple peppercorns (recommended: peppercorn melange)
1 flank steak, about 1 1/4 pounds
Salt
2 teaspoons garlic flakes
4 slices bacon, diced
1/2 cup balsamic vinegar
1/2 cup reduced-sodium beef broth
2 teaspoons cornstarch
2 tablespoons chopped fresh parsley leaves
Heat a stove-top grill pan or griddle with cooking spray over medium-high heat to preheat. Place peppercorns in a plastic bag and smash with the flat side of a meat mallet, or bottom of a heavy skillet, until finely crushed. Season both sides of flank steak with crushed peppercorns, salt and garlic flakes.
Place steak on hot pan and cook 5 minutes per side for medium doneness. Remove from heat and let steak rest 10 minutes. Slice meat crosswise into 1/4-inch thick slices.
While the steak is cooking, Place diced bacon in a large skillet over medium heat until browned and crisp. Add vinegar and bring to a simmer for 5 minutes, or until liquid reduces. In a small bowl, add broth and cornstarch, whisking until cornstarch is completely dissolved, and add to skillet. Simmer 2 minutes bringing to a full boil, until sauce thickens. Remove from heat, spoon sauce over steak slices and top with parsley.

I would serve ham. It is already seasoned, and should make a good mix.

4 (1 1/4 inch thick) pork chops
salt and pepper to taste
1 tablespoon butter
3/4 cup evaporated milk
1/4 cup water
1 can cream of mushroom soup
Preheat oven to 350 degrees F
Season pork chops with salt and pepper to taste. Melt the butter in a large skillet over medium high heat. Saute the pork chops in the butter for about 5 minutes per side.
In a separate medium bowl, combine the milk, water and soup. Place the pork chops in a 9x13 inch baking dish and pour the soup mixture over the chops.
Bake at 350 degree for 45 minutes.
I would make pork chop gravy with that
fry the pork chops cut up and seasoned with black pepper and salt rolled in flour, fry in a little canola oil, when done add milk, it should thicken to a gravy from the flour and oil
tip keep stirring once you add the milk, it takes a min but it will thicken up, you may need to add like a tsp of flour prior to adding the milk

Chicken can be seasoned any way you want. I get the polutry seasoning from the store and always use that for my chicken and turkey. I good steak would be nice with this dinner. Seasonings you could marinate it in Italian dressing and onions, or get a steak seasoning from the store or just mirinate it with meat tenderizer, salt, pepper, garlic, and onion powder. Have fun it sounds like a great dish!
