There are thousands of brunch recipes and so many to choose from. I went to http://www.recipezaar.com/recipes/brunch
and pulled up just a handful of their recipes that I thought looked good. Hope you like something in what I am pasting for you.

Breakfast Pizza
I sometimes make this the night before it we have a lot to do in the morning. It also works great for a brunch, party, etc.

16 servings 2 pizzas
40 min 20 min prep
1 refrigerated pizza crust
2 (10 ounce) cans country gravy (sausage)
10 eggs, scrambled and cooked
1 lb sausage, cooked and crumbled (can use bacon or ham)
2 cups shredded colby-monterey jack cheese
4 ounces sliced fresh mushrooms

Preheat oven to 350 degrees.
Remove crust from container and cut in half.
Spread out each half onto a 12" pizza pan.
For Each Crust:.
Bake for 5 minutes.
Spread gravy over crust.
Crumble eggs and spread over gravy.
Sprinkle sausage, mushrooms, and cheese over eggs.
Bake in oven 15 minutes or until cheese has melted.


Here is another one for a crustless Quiche

I could eat this any time of the day! It's very versatile--you can use any type of cheese you have on hand, except swiss.

2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
10 eggs
1 1/2 cups milk
1 (10 ounce) box frozen broccoli, thawed and patted dry with paper towel
1 lb sausage or bacon, browned and crumbled
butter, for pans

Preheat oven to 350.
Butter two pie pans and divide cheese between pans.
Next, divide broccoli between pans.
Top with meat.
Beat eggs and milk; pour half of mixture into each pan.
Bake 30 to 50 minutes.

This one sounds good and healthy too!

look up a strata recipe....you use a loaf of bread, cream cheese, eggs, cream, fresh herbs, pancetta, mushrooms, mozzarella, etc...
or a french toast casserole....mix up eggs & cream w/cinnnamon (dash of maple syrup) and pour over slices of frech bread in a casserole dish & bake.
or make quiche (4 eggs, 1 cup milk, 1 cup cream, shredded cheese & whatever fillings)...pour into pie crust and bake 350 degrees for @5 minutes.

I actually suggested this to another poster who had purchased artichoke hearts and was looking for a recipe. I have made this a million times and it is wonderful. You can switch out any of the ingredients such as the artichokes, pimento and peppers and add other things like sausage slices, or ham pieces, bacon...
Tomato, other veggies, even fruit slices that have been cooked tender...up to you. But the bread that I use is the best I think, and the measurements of egg...etc..
Personally, I would eat this one for breakfast however and have a sausage or bacon on the side.


A really good strata.....Love this stuff. I usually use canned artichoke hearts but i'm sure frozen will be even better....Here you go!

4 Tbs. butter
2 packages (9 ounces each) frozen artichoke hearts, thawed ( converted from canned to frozen)
1/4 cup chopped shallots
1/2 tsp. dried thyme
1/2 cup oil-packed roasted...or not.. pimentos, or you can use roasted red peppers.
3/4 pound challah, cut into 1-inch cubes lightly toasted. I just put them on a baking pan and toast them a bit in the oven while prepping the other ingredients.
1 1/2 cups grated Cheddar cheese
4-1/2 cups milk
5 eggs
4 egg yolks
salt and pepper
1/2 cup grated Parmesan cheese (optional)

Preheat oven to 350 degrees.

In a large skillet melt the butter. Cook the artichoke hearts, shallots and thyme until tender

Butter a 13-by-9-inch baking dish. Put the bread cubes in pan and then sprinkle the artichoke mixture and the cheddar cheese and toss. Layer the pimento or roasted peppers on top of the tossed bread mixture.

In bowl whisk the milk with the eggs, yolks and salt and pepper. Pour into baking pan/over the bread artichoke mixture. You then sprinkle the parm cheese on top or you can sprinkle more cheddar cheese...all a matter of taste.

Bake for about 50 minutes or until custard is set.
Note* You can put this all together the night before or hours prior to baking and let it stay in the fridge covered and bake later in the day or the next day.

1 pound ground pork sausage
1 teaspoon mustard powder
1/2 teaspoon salt
4 eggs, beaten
2 cups milk
6 slices white bread, toasted and cut into cubes
8 ounces mild Cheddar cheese, shredded

Crumble sausage into a medium skillet. Cook over medium heat until evenly brown; drain.
In a medium bowl, mix together mustard powder, salt, eggs and milk. Add the sausage, bread cubes, and cheese, and stir to coat evenly. Pour into a greased 9x13 inch baking dish. Cover, and chill in the refrigerator for 8 hours, or overnight.
Preheat oven to 350 degrees F (175 degrees C).
Cover, and bake 45 to 60 minutes. Uncover, and reduce temperature to 325 degrees F (165 degrees C). Bake for an additional 30 minutes, or until set.
