I need a green pea salad recipe.?!
Makes 4 servings
1 (17-ounce) can green peas, drained
2 hard-boiled eggs, diced

2 teaspoons minced onion
1 teaspoon mayonnaise

COLD GREEN PEA SALAD
1 (10 oz.) pkg. frozen small peas (early party peas best)
1 tart, red-skinned apple
3 green onions, thinly sliced
1/2 c. sour cream
1/2 - 1 tsp. horseradish
1/4 tsp. salad
1/8 tsp. pepper
2 tsp. lemon juice
Turn peas from package into colander. Run hot water over until just thawed. Rinse in cold water and drain thoroughly. Without peeling apple, core and chop. Combine in bowl drained peas, chopped apple, and onion.
Dressing: Combine sour cream, horseradish, salt, pepper, and lemon juice. Add to salad and mix lightly. Dressing can be made a day ahead. Serve in bowl lined with crisp greens. Yield 4-6 servings.
Fresh Green Pea Salad

This recipe for green pea salad includes cooked crumbled bacon, green onions, sour cream, dill, and cooked green peas.
INGREDIENTS:
3 cups fresh green peas or 2 (10oz) pkgs frozen, thawed
4 to 5 slices crisply cooked bacon, crumbled
1 cup sour cream
1/4 cup chopped green onions or chives
salt and pepper. to taste
mint or fresh dill, as desired
PREPARATION:
Cook peas until barely tender; drain well and chill. Combine all ingredients and refrigerate until ready to serve. Serve on lettuce.
Rinse 10oz frozen peas under running water until thawed, mix with 2 cups cooked pasta, 1 jar diced pimento, 1/4 cup mayonnaise, a TBSP minced fresh mint, and salt, pepper and lemon to taste.
If you want it to be a main dish add cooked shrimp.
This is my recipe:
2 cans green peas, drained thoroughly
1 C. cheddar cheese cubes
1/2 C. diced red onion
3 hardboiled eggs, peeled and chopped
Dressing:
1 C. Miracle Whip
1 tbsp. sugar
1 tsp. vinegar
Combine peas, cheese cubes, eggs, and onions. Set aside.
Mix all dressing ingredients, and pour over pea mixture. Gently stir to combine, and chill.
COLD PEA SALAD
INGREDIENTS
1 (17-ounce) can English peas
2 tablespoons chopped green pepper
1 teaspoon chopped pimiento
2 tablespoons chopped celery
1 tablespoon chopped onion
2 tablespoons diced sharp Cheddar cheese
1 tablespoon pickle relish
1 hard-cooked egg, diced
1-1/2 tablespoons Hellmann's mayonnaise
DIRECTIONS
Drain peas thoroughly.and set aside.
Combine next 6 ingredients and mix well.
Add peas, egg, and mayonnaise and mix gently.
Chill and serve.
SERVES 4-6
Cold Pasta and Pea Salad
1 ? c. frozen peas, slightly thawed
? c. sweet pickle relish
? onion (finely chopped)
3 hard boiled eggs (chopped in small pieces)
? c. mayonnaise
2 tablespoons curry powder
? Macintosh apple, chopped in small, square pieces
8 oz. tortellini pasta with cheese
salt and pepper to taste
Steps
1Step OnePlace tortellini pasta in water in a 2-quart saucepan. Boil ten minutes or until tender. Drain.
2Step TwoPlace peas in medium bowl. Stir in pickle relish, onion, and eggs, being careful not to smash the peas.
3Step ThreeMix curry powder into mayonnaise and stir into the peas. Stir in pasta, and gently mix under combined. Add salt and pepper to taste.
4Step FourChill for at least fifteen minutes. Place in bowl when ready to serve, and toss.
I've made both of these and they are two of my favorite salads. I hope you enjoy them as much as my family does.
