This has more chocolate than flour... cake on oustide, molten chocolate inside! Fabulous!
MOLTEN CHOCOLATE LAVA CAKES
? C. butter, unsalted
4 oz. bittersweet chocolate
2 eggs
2 egg yolks
? C. sugar
2 Tbsp. all-purpose flour
Butter and flour custard cups or specialty molds. Preheat oven to 450oF. Melt the butter and chocolate, but do not let it boil. Remove from heat and set aside. Beat together the 2 eggs plus 2 yolks and the sugar, until it's light and thick... about 5 minutes. Pour the now tepid chocolate mixture into the egg mixture, and beat to mix. Quickly beat in the flour until just mixed in. Pour into the custard cups. (At this point you can refrigerate for up to 24 hours. If you refrigerate, let return to room temp before you bake.) Put custard cups on a baking sheet and bake at 450oF for 6-7 minutes. The outside will be set up, but the top may still be slightly wiggly. Invert on plate, let sit for 10 seconds or so, remove custard cup. Sprinkle with powdered sugar, and surround with a raspberry sauce or add a scoop of ice cream or real whipped cream on the side -- your choice.

Heavenly Pink Salad
1 (21oz.) can cherry pie filling
1 (14oz.) can sweetened condensed milk
1 (11oz.) can mandarin oranges, drained
1 (15oz.) can crushed pineapple
1 (16oz.) carton frozen whipped topping, thawed
1 cup shredded coconut
2 cups miniature marshmallows
crushed pecans (optional)
Mix together the cherry pie filling, condensed milk, oranges, pineapple, coconut, marshmallows and whipped topping. Chill for several hours and top with crushed pecans if desired.

Orange Dream Divinity
1/2 cup orange-colored white chocolate* (or use white chocolate and add candy food coloring)
1 teaspoon orange oil
2 ? cups sugar
? cup water
? teaspoon salt
? cup light corn syrup
2 egg whites, room temperature
1 teaspoon vanilla extract
? cup finely chopped pecans
* Available at cake supplies store
Prepare orange pieces: In a double boiler over simmering water, melt the orange-colored white chocolate. When smooth and melted, remove from over double boiler and add orange oil (orange extract may also be used). Pour onto a cookie sheet lined with aluminum foil and spread evenly. When cool, chop into medium small pieces. Set aside.
Combine sugar, water, salt, and corn syrup in a 3-quart saucepan; cook over low heat stirring gently until sugar is dissolved. Turn heat up to medium and place lid on pan for 2 to 3 minutes to wash down sugar crystals. Uncover and continuing cooking without stirring until candy thermometer reaches hard ball stage (260 degrees F).
Beat egg whites until stiff peaks form, just before sugar mixture is ready. Pour hot sugar mixture over egg whites in a thin stream while mixer is at high speed. Add vanilla and continue beating until candy starts to loose its gloss and hold its shape. Add nuts and orange pieces. Drop by rounded spoonfuls onto waxed paper.

Chocolate covered strawberries/fruit topped with chopped nuts is a classical one.
I'm not sure why it has to be a baked dessert but the first thing that comes to mind is baked custard. It's basically eggs, milk, and sugar. I would just search for a recipe online.
Thai Fried Bananas
This is one of my favorite recipes. I have it every time I go to a Thai restaurant topped with coconut ice cream or drizzled with honey. If you have never tried it, now is the time, it's so good! I use Nam, a variety of banana which can be found at most Asian Markets.
PREP TIME 20 Min
COOK TIME 15 Min
INGREDIENTS
3/4 cup white rice flour
1/4 cup tapioca flour
2 tablespoons white sugar
1 teaspoon salt
1/2 cup shredded coconut
1 1/4 cups milk
10 bananas
3 cups oil for frying
DIRECTIONS
In a medium bowl, mix rice flour, tapioca, sugar, salt and coconut. Stir in milk, a little at a time, and mix to form a thick batter.
Peel the bananas and cut each lengthwise into 3 or 4 pieces. Heat oil in deep-fryer or deep wok to 375 degrees F (190 degrees C).
Completely coat each banana slice in batter, then fry in hot oil until golden. Drain on paper towels. Serve at once
