Best steak, pan fried (there's an oven and a cast iron skillet involved, though)
Assuming medium rare
Filet's or whatever you like. The fattier, the slower the cooking has to be, so you can adjust.
Salt, Pepper and a light coating of non-reactive oil (vegetable or canola work just fine).
1) Place cold cast-iron skillet in oven
2) Heat oven to 500 deg
3) Lightly coat your steaks, both side in the oil, sprinkle both sides liberally with salt and cracked pepper.
4) When the oven has reached temperature, turn the stove on HI
5) Using lots of protection, move skillet to stove and SEAR the steaks, both sides, 30 secs each side [you might want to have the vent fan on as there is some smoke sometimes]
6) Place the steaks back into the HOT oven for 2.5 mins
7) Flip the steaks and leave for another 2.5 mins
8) Remove from the oven and let them rest for 10-15 mins.
For medium steaks,
In step 6 and 7, make sure to drop the oven temperature to 450 deg (F) and keep the steaks in for 5 mins each side.
