The Breakfast Omwich

This is a delicious, flavorful breakfast sandwich that will fill you up and get you ready to go in the morning. I like to use Tillamook Cheddar cheese. Add various chopped vegetables and meats such as sliced chicken, turkey, or roast beef to the egg mixture to suit your taste.

INGREDIENTS
3 slices bacon
3 eggs, lightly beaten
1/2 cup grated Cheddar cheese
1 pinch salt and ground black pepper to taste (optional)
2 slices cooked, chopped ham
1/4 cup finely chopped onion (optional)
1/4 cup chopped fresh mushrooms (optional)
1/4 cup green bell pepper, finely chopped (optional)
2 drops hot pepper sauce (e.g. Tabasco?),
4 slices bread, toasted
2 tablespoons mayonnaise, or to taste (optional)

DIRECTIONS
Place the bacon in a skillet and cook over medium heat until evenly browned and crisp.

Remove, and drain on paper towels. When cooled, crumble into small pieces.

Stir the eggs and 1/4 cup Cheddar cheese together in a bowl until blended.

Season to taste with salt and pepper. Pour the egg mixture into a skillet over medium heat.

When the bottom of the eggs is set, layer with the bacon, ham, and if using, onion, mushrooms, green pepper, hot pepper sauce.

Sprinkle with the remaining 1/4 cup Cheddar cheese.

Carefully fold one half of the egg mixture over the filling ingredients.

Cook until the cheese melts and the bottom is golden; turn and cook the other side until golden.

Set two slices of toast on two serving plates, and spread each slice with mayonnaise, if desired.
Cut the egg mixture in half, and place one half on each piece of toast.

Top each with the remaining toast

its easy it looks hard that cos i divided the steps.heheheh.TAKE A BIG BITE AND ENJOY

toast. buy some different jams and jellies. Eggs? Microwave or pan fried sausages? Bacon? None of this really takes more than a few minutes.

french toast dip the bread in some eggs and put cinnamon on it and butter. Fried potatoes with eggs, A fruit smoothie, pancakes with banana's, omelet.

This isn't something that youwill make tomorrow but you can cook and prep it on Sat then freeze it and have it at hand.
I love corned beef. This is a little more effort but 100 times better than the canned stuff that tastes and smells like dog food.

Buy a corned beef from the grocery store and boil it with the seasoning package, until it is very tender. Like falling apart tender. In the meantime bake some potatoes (about 4-5 depending on the size) in the oven or the microwave. Peel them and finely chop them. This is easier if you llet them cool before attempting to cut them.

Let the corned beef cool slightly, this will make alot so if you want to then slice a little bit for sandwiches. Then shred or finly dice the corned beef. In a large bowl mix the beef and potatos. Put about 1-2 cups in freezer bags, date, lable, and freeze. But save some out fry some of your corned beef in a skillet. Watch out it will pop at you. Serve with toast and eggs, and hashbrowns.

I like my corned beef hash with a little bit of ketchup.

Breakfast Casserole Muffins

1 pound sausage, browned and drained
6 eggs
1 cup Bisquick
2 cups half-and-half (you can substitute milk)
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups grated cheese

Place drained sausage evenly in muffins tins which have been sprayed
with Pam. Mix eggs, Bisquick, half-and-half, salt and pepper
together. Pour evenly over the sausage. Top with grated cheese. Bake
for 25 minutes in 350 degree F oven.

Makes 24 muffins.

Optional: While browning sausage, you can add some onions, green
peppers and mushrooms. Also, bacon or ham can be substituted for
sausage

theres also biscuits and gravy.

i would give you the recipe i use... but i've never measured any of it out... i have no idea how much flour and water i use..... i just know the consistency i need. but i am sure you can find recipes online.

i also like to fry up some hashbrowns throw in some ham, then add cheese and fry a couple eggs over easy and serve them over the hashbrowns with some cheese and toast, or biscuits... also if i have leftover sausage gravy it is wonderful to add to this mix.. it sounded kinda gross at first, hubby got me to try it and i love it.

you can always make some muffins or a good omelet. i like fried egg sandwhiches every now and then.

hope you have a great breakfast.

Breakfast Burritos with scrambled eggs, sausage, diced potato, onion and green chili's.wrapped in a warm flour tortilla.

Ooh! Monkey Bread!

Fill a gallon-size Ziploc bag with 1 c white sugar and some cinnamon.

Take 2 cans of refrigerated biscuit dough and cut them in either half or in quarters, depending on preference. (I like half better.)

Put 4 to 5 balls of dough at a time in the plastic bag and shake until coated. Continue until all dough is coated and set aside.

Meanwhile, in a saucepan combine 1 c brown sugar and 1/2 c butter. Melt until thick. (I like to add pecans, too.)

Arrange one layer of dough balls in a round pan. Pour a little of the syrup on top. Top with another layer of dough, and more syrup. Continue until you're done with the dough. Pour the remaining syrup on top.

Bake at 350 for 30 minutes, or until dough is cooked. While still warm, flip onto a servig plate. The still-warm syrup will soak into the cake. You don't need to cut- just pull apart.

MMM!!!
