The dry yeast in the packet is not quite 1 tablespoonful but when I buy it in the jar, I always use one tablespoonful and it works great. If I remember correctly on my bread machine, it calls for 1 teaspoon so, if making it from scratch by hand, and your recipe calls for 2 packets, I'd use 2 tablespoons.

Use one teaspoon per package.

I make bread all the time and that is what I do and my bread comes out great!

it depends whether you have instant or active dry

a packet is 2 1/4 tsp according to the back of the Fleischmann's packs.
