CHICKEN CAESAR SALAD!!!!!!!!!!!!

This is a traditional Southern salad. Best if eaten immediately upon preparing.

INGREDIENTS
2 (4 ounce) packet saltine crackers
1 large tomato, chopped
3 green onions, finely chopped
1 3/4 cups mayonnaise
1 hard-cooked egg, chopped
salt and freshly ground black pepper to taste

DIRECTIONS
Coarsely crumble the saltines into a medium bowl. Mix in the tomato, onions and mayonnaise. Stir in the hard-cooked egg, and season with salt and pepper

I like my version of tuna salad:

3 small cans of tuna drained.
1/4 cup sweet pickle relish
1/2 tsp. ground black pepper
1/2 to 3/4 cup of Mayonnaise
1 TBS lemon juice
1 tsp lemon zest
1 large onion chopped
1 can water chestnuts chopped into large pieces
3 sticks of celery chopped small
1/2 head of lettuce shredded or chopped up

Mix all together in large bowl..... serve on a bed of lettuce, or on crackers....or as sandwiches. Refrigerate in between uses..................... it it looks water.....just stir it up....the liquid is from the chopped lettuce....

**** You can use more of any of the ingredients to your liking
**** I sometimes add a bit of red bell pepper mince up for bits of red color.
