Yes you can put in the fridge overnite, wrap in saran wrap,
after you either shape into a ball, or after you roll it.
you can freeze also, but in the fridge is best as long as you use it
in the next 2 days,
just make sure you put it in there right away before the shortening melts and then your crust will not be flakey.

Doesnt take very long to thaw, I would freeze it.
I would cover it well, put in the fridge (not freeze) and simply take it out about an hour before you are going to start working it.

Just keep it in the fridge overnight, let it sit out on the counter for about 15 minutes, then flour a work surface and go to town with your creation!!! Enjoy whatever you're making!!

refrigerationis fine! I have kept pie crust in the fridge overnight plenty of times, and it turns out fine! Just make sure that it reaches room temperature before you do anything to it. If your dough is dry, then sprinkle a little water on it and let it set out for a minute or two to let it absorb.

Yes you can, I do that all thetime. As long as you use the dough within a few days, it will be fine. It keeps in the freezer for up to 3 months
