Ingredients :

4 cup Skim milk
pinch of Salt
1xVanilla bean, split length- wise or you can use:
1 tsp vanilla extract
1 cup Finely ground cornmeal
1/2 cup Sugar
1/2 cup Mascarpone cheese or straw- berry or apricot preserves or whatever flavor you like...



Method :

* Combine the milk, salt, and vanilla bean halves in a heavy saucepan. Bring to a boil over high heat, then reduce to a simmer. Slowly add the cornmeal, stirring constantly, and cook, continuing to stir for 5 to 7 minutes. Remove the pan from the heatm stir in the sugar and the vanilla extract(if using) and allow polenta to sit, covered, for 5 minutes. Remove tha vanilla beans halves if necessary. Divide the polenta between 8 dessert dishes. If desired, spoon Mascarpone cheese or preserves in the center of each serving.

Doesn't sound like any kind of dessert I'd want to eat. :-p

...you can make Johnny Cakes and eat it with cinnamon honey?

Mix the 2 cups of corn meal with 1 part milk, 1/2 cup sugar, a tablespoon of honey and 1 egg and bake into pancake shaped thingies.

Then mix a cup of honey with 2 teaspoons of cinnamon. When the cakes are done baking you can drizzle the honey, or you can dip it in the honey.

This is a classic with milk and cornmeal, but I don't know how healty it is. Maybe served with fruit instead of the classic ice cream.

I can remembering having warm johnny cake with a little bit of strawberry jelly, it was delicious.
