Pork roast covered by sauce or no?!
Answers: I am making a pork roast I don't know what kind but it is roundish and its about the size of a brain. I want to cook it in my crock pot and don't know if it should be fully submerged in sauce or not.
NO, It will make plenty of 'juice' as it cooks. Just add seasoning's or a little bit of sauce on top for flavoring.
EDIT: Once your pork is done, remove it. Let it cool enough to be able to pull it apart. Once pulled apart, drain liquid out of crock pot, and replace pulled pork. Pour on any sauce you desire, and cook on low for about 30 minutes to one hour. Or you can pull the pork and serve like that, letting everyone add their own sauce.

PAN SAUCE-GRAVY:
2 tbsp. flour
1 tbsp. Dijon mustard
1 1/2 tbsp. ketchup
1 c. applesauce
2 tsp. horseradish
1 c. beef broth
1 c. water
1/2 tsp. salt
OR
6 cloves garlic, crushed
1 tsp. caraway seeds
1 carrot, peeled
1 onion, peeled
1 stalk celery
1 c. prune juice
10 whole plums or dried prunes, seedless, quartered
1 pkg. McCormick pork gravy mix
2 c. water
Salt and pepper to taste
It has enough fat that you need not put much liquid at all. I would brown it first in a skillet.
If you're cooking in a crock pot, you don't need a lot of liquid. The pot slow cooks the meat which keeps the meat moist and tender. For more flavor you can marinate the roast overnight using whatever marinade recipe you choose.
Rub it all over with seasonings, brown in a skillet stovetop for good color and rich gravy. No need to submerge, you will wind up with too much liquid. But make sure you have enough liquid to keep the bottom of the crockpot from drying up.

Most pulled pork is cooked low and slow by smoking which gives its flavor.
Season meat with S&P, if possible sear on a grill prior to putting it in your crock pot.
if not ....sear on your stove top browning all sides.
place about an inch of BBQ sauce in the bottom of of your crock. add roast.start off on high,then turn to low and let cook several hours.....5 or so.turn pork or baste every hour ,until meat begins to break down.....between the juice of the pork and the added BBQ sauce.you should have plenty of sauce for the pork with out adding more.
