What is the difference (in baking cookies) between old fashioned and quick cooking oats?!

Many cookie recipes will state which Oats are used....I use both and either...or what I happen to have...and we like both in cookies....No problem.
AND I HAVE NEVER HEARD OF SOAKING THE OATS....this will make the batter quite different....all I can say here is try it.....but, I would half batch that if I was experimenting....
Old Fashioned oats will make a chewy cookie.
Quick Oats make a softer cookie.
You can. But the old fashion oats will stay pretty tuff. The quick oats suck up more of the liquid and get alot softer.
The old fashioned oats always took longer to cook so if you are going to use these and not the "quick" oats, soak them overnight in water so they soak up the moisture. Squeeze the excess water out when you are ready to do your baking.
Old Fashioned Oats are whole oat groats that are rolled to flatten them. They contain all parts of the oat grain including the bran, endosperm and germ portion. Quick Oats are made the same way but are simply cut into slightly smaller pieces so they cook faster.
