Do all Red Velvet Cakes turn out alike? Are the recipes the same or close to the same? What's yours?!


Question: I guess you could say the end product it about the same. Here is my recipe.

Red Velvet Cake
1/2 cup shortening
1 1/2 cups sugar
2 eggs
1 tsp. vanilla
1 tsp. butter flavoring
1 1/2 oz. bottle of red color
3 Tbl. (level) cocoa
2 1/2 cups sifted cake flour
1 cup buttermilk
1 tsp. salt
1 Tbl. vinegar
1 tsp. baking soda
Frosting Ingredients -
2 packages cream cheese (3 oz. each), softened
6 Tbl. butter, softened
1 tsp. vanilla
2 cups sifted powered sugar
Cream shortening, sugar, eggs, and flavors. Make a paste of cocoa and food coloring. Add to first mixture. Alternately add flour and buttermilk. Mix baking soda and vinegar in small bowl; add to batter. Blend. Bake in three 9" or 10" pans for 20 - 25 minutes at 350?°. Let cool completely.
For the frosting, blend all the ingredients until smooth. Cover the cake with the frosting.

I just pulled out my mother-in-law's recipe (it's excellent) and compared it to several on foodtv.com. They are fundamentally the same. The biggest difference I noticed is the fat. One called for all butter. One used oil. My mil's recipe uses shortening.

Red Velvet cakes are probably all similar, but not exactly the same.

Edit: I just read the recipe above, and I have the same cake recipe, but for frosting I cook 2T of cornstarch and a cup of water until it's thick and then chill it.

I cream a cup of butter with a cup of sugar and 1 t of vanilla. It needs to be beaten until creamy, then mixing in the chilled mixture. It takes a lot of mixing but whips up like whipped cream. Very rich and delicious!

RED VELVET CAKE

2 1/2 c all purpose flour
1 1/2 c sugar
1 1/2 c oil
1 c buttermilk
2 eggs
1 tsp vanilla
2 tsp cocoa
1 tsp salt
1 tsp soda
1 tsp vinegar
1-2oz bottle red food coloring (or 2-1oz bottle)

Mix all ingredients together and bake at 350F for about 30 to 35 minute.

Icing:

1 Box (16oz) confectioner's sugar (sifted)
1 stick butter, softened
1 8oz package cream cheese
1 tsp vanilla
1 cup mixed nuts
sugar
butter
cream cheese
vanilla

Combine first 5 ingredients. Add remaining ingredients until icing forms peaks. Fold in the nuts and spread over the cake.

Fabulous Red Velvet Cake

1 cup vegetable shortening
2 eggs
1 1/2 cups sugar
1 teaspoon cocoa powder
2 ounces red food coloring
2 1/2 cups cake flour
1 teaspoon salt
1 cup buttermilk
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon vinegar
White frosting, recipe follows
White Frosting:
2 tablespoons flour
1 cup milk
1 cup unsalted butter
1 cup confectioners' sugar
1 teaspoon vanilla extract

Preheat oven to 350 degrees F.
In the bowl of a mixer, cream together the shortening, eggs and sugar. In a separate small bowl, mix together the cocoa and food coloring. Add the paste to the shortening mixture. Sift the flour and salt together over parchment. Add to the batter alternately with the buttermilk in 3 additions. Add the vanilla extract. Fold in the baking soda and vinegar. Pour the batter into 2 greased 9-inch cake pans. Bake for 30 minutes or until an inserted cake tester comes out clean. Let cool on a cooling rack. Invert the cakes from the pans.

Frosting: Over medium heat, cook the flour and milk until thickened. Let cool. In the bowl of an electric mixer, cream together the butter, sugar and vanilla until light and fluffy. Beat in the flour mixture.

Frost the top of the first layer with frosting and set the second layer on top. Frost the entire cake with remaining frosting.

I have tried all recipes from homemade to prepackaged. The following recipe is the best.

1 package of Fudge Marble Cake mix
1 teaspoon of baking soda
2 eggs
1 and 1/2 cups of buttermilk
1 ounce bottle red food coloring
1 teaspoon of vanilla extract
Combine all ingredients and mix well. Pour into 2 greased and floured 9 inch round cake pans. Bake at 350 degrees for 30-35 minutes.
Cool on racks.

Frosting

2-8 ounce packages of cream cheese
1 cup of butter
2 teaspoons of vanila extract
4 cups of confectioners sugar
Beat cream cheese, butter and vanilla in a bowl until smooth. Beat in sugar. Spread over cooled cakes.

Original Red Velvet Cake and Frosting

5 tb Flour
1 c Butter
1 c Sugar
1 ts Vanilla

CAKE: Cream together butter, sugar and eggs. Make a paste of cocoa and
food coloring. Add the paste to the creamed mixture. Mix salt and vanilla
in buttermilk and add alternately with the flour. Mix soda and vinegar
separately, add last, folding in. DO NOT BEAT after adding soda mixture.
Bake at 350 degrees for 30 minutes.

ICING: Boil together milk and flour until thickened. Let stand until cool.
Cream together butter, sugar and vanilla. Add milk and flour mix and beat
very well. (The longer you beat it the better it gets.)
