The one I'm cooking for tonight! I love the cycle of thinking about making a dish, getting hungry for it, preparing it, and then actually getting to eat it. Anticipation is the best sauce!
Pretty much anything Italian.
Maybe my homemade pizza. I make the dough from scratch. I put fresh, diced tomatoes and mushroom on it, and Italian sausage. I sometimes add my own spices to the meat too as I pre-cook it in the skillet. I esp. like to add garlic and anise seed and basil and red pepper flakes. Depends on my mood. I use a good pizza sauce from a jar. I use mozzarella and Parmesan cheeses. I roll the crust out on a pastry cloth, and I cook it on a pizza stone. I like thin crust, and my secret to crispy thin crust is to use corn meal as a base on the stone under the dough. It's soooo easy, really. Fun, if you like to cook anyway.
I love to make this when I have friends over. It's easy. I can set up the dough the night before, if they're coming the next evening during the work week, and actually the meat can be browned and put in the refrig in the pizza sauce overnight, too. I have two pizza stones, so I can make two at a time.
Friends say I make a great pie, and I'm always amazed at how many people have never made pizza this way. There's never a reason not to have company for an easy dinner when you can throw together a couple of pizzas and get a Caesar salad in a bag. A bottle of wine is nice, too, if the friends aren't in recovery!
