Yum, I love red-skinned potatoes. With the skin on.

I'm not a big fan of "skins" unless they are an appetizer with cheese, bacon and onion.

I like the potatoes peeled, but will use the red potatoes with skins on if I'm taking it for a covered dish. It makes it prettier.

When I am making my mother's best Midwestern potato salad, I peel the potatoes. But for French herbed potato salad or German potato salad I leave the skins on. I do want the skins cut up enough so you don't get a bite of just skin.

I've never made it that way myself, but I've had it like that (red-skin, skin-on) a few times and I love it!

P.S. - I LOVE it when there's a bit of juice from the pickle jar mixed in to the potato salad!

i like both in any way of preparing them especially hot on a winters day i never peel my potatoes the skin is good for you plenty of fibre and vitamins and minerals you wont find any veggie or fruits skins in our rubbish bins only orange and lemon,grapefruit peels

I love redskins but I'm not such a fan of them in potato salad. I think they're best served as a hot side dish if I leave the skins on. Good that way, too, if I cook them with a roast.

For potato salad, though, peeling redskin potatoes is just too much work! I use something easier ... Russets, for example, because they're bigger.

I prefer potato salad without the skins, red or white. An easy way to peel the skins is to boil the potatoes whole, about 20 minutes for medium size potatoes. The skins come off easily, and without wasting much of the potato. For variety, I grate the potatoes instead of cubing them; it's quick and easy. Yum!
