Here are my favorites:

Shrimp wrapped in bacon and broiled (be sure a partially cook the bacon first until it is limp or the shrimp will be cooked too much).

Shrimp - diced, mixed with bread crumbs, parsley, dill, and black pepper and stuffed into trout and baked. This is also good with a filled of sole or cod or salmon wrapped around it and baked.

Shrimp Croquettes (white sauce, diced shrimp, white pepper, rolled into a cone, dipped in bread crumbs and fried and then topped with a Mornay sauce or Cream sauce.

Stir Fry with Shrimp. Your favorite veggies - I like celery, carrots, onion, bok choy, pea pods, bean sprouts, water chestnuts, Napa or Chinese cabbage and a sauce made of soy sauce, chicken base in 1/4 c water, sesame oil, Oyster sauce, and ground ginger.

Shrimp Scampi - sauteed onions and garlic, diced tomatoes, white pepper and white wine.

Shrimp Salad - either mixed into a bunch of different kinds of lettuce - shredded, diced yellow onion, diced radishes, the shrimp (boiled) with a dressing made of mayonnaise, black pepper and water or milk to thin. You just want enough to lightly coat all ingredients - you don't want it heavy and thickly coating everything.

Enjoy!

SHRIMP SCAMPI

This shrimp scampi recipes is one of the most popular recipes on this site. An easy recipe for shrimp scampi, made with shrimp, garlic, butter, and a little white wine and lemon juice.

INGREDIENTS:

* 1 1/2 pounds large shrimp (about 16 to 24)
* 1/3 cup clarified butter
* 4 tablespoons minced garlic
* 6 green onions, thinly sliced
* 1/4 cup dry white wine
* 2 tablespoons lemon juice, fresh if possible
* 2 tablespoons chopped fresh parsley
* salt and pepper, to taste

PREPARATION:
Rinse shrimp and set aside. Heat butter in large skillet over medium heat. Cook garlic 1 or 2 minutes or until softened but not browned. Add shrimp, green onions, wine and lemon juice; cook until shrimp are pink and firm, about 1 to 2 minutes on each side.
Do not overcook. Add chopped parsley and salt and pepper before serving. Garnish with lemon slices and parsley sprigs if desired.

Makes 8 first-course servings.

Sauteed in butter with garlic, add some parsley. Or just dip it plain into some good seafood sauce. You can make your own with horseradish and ketchup, but it's better to buy it. Gorton's is always good.

This is still my all time favorite shrimp dish!

Linguine with Shrimp Scampi

Vegetable oil
Kosher salt
3/4 pound linguine
3 tablespoons unsalted butter
2 1/2 tablespoons good olive oil
1 1/2 tablespoons minced garlic (4 cloves)
1 pound large shrimp (about 16 shrimp), peeled and deveined
1/4 teaspoon freshly ground black pepper
1/3 cup chopped fresh parsley leaves
1/2 lemon, zest grated
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 lemon, thinly sliced in half-rounds
1/8 teaspoon hot red pepper flakes

Drizzle some oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions on the package.

Meanwhile, in another large (12-inch), heavy-bottomed pan, melt the butter and olive oil over medium-low heat. Add the garlic. Saute for 1 minute. Be careful, the garlic burns easily! Add the shrimp, 1 1/2 teaspoons of salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often. Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine.

When the pasta is done, drain the cooked linguine and then put it back in the pot. Immediately add the shrimp and sauce, toss well, and serve.

Or if you prefer to just grill them (this also works under the broiler - )

Tequila Lime Shrimp Skewers

1 cup tequila
1/2 cup freshly squeezed lime juice
1-ounce freshly chopped cilantro leaves
1/2 fresh red onion, chopped
Salt and pepper
12 medium raw shrimp

Combine all marinade ingredients and marinate the shrimp for 30 minutes. Place them on skewers and grill or broil for about 3 minutes on each side.

Enjoy!

yahoo recipes is great so is food network or southern living websites. 40 lbs of shrimp are a lot , do you plan on cooking them all at once? if not you need to freeze them. i use freezer bags and fill with water, not to much. if you are going to cook all at once you could boil some fry some make shrimp salad, stir fry, casserole, shrimp creole, gumbo jambalaya, you could even do a shrimp newberg. good luck

CREOLE, LOUISIANA STYLE..

Baked stuffed shrimp is always good and there are plenty of recipes out there on the internet for them i'm sure. A good place to go for recipes is allrecipes.com . They have tons of recipes that people give ratings and comment on.

We love a shrimp, mini cobs of corn and red potato boil. Buy a package of crab/ shrimp boil and get your big pot ready. Boil the corn and the baby red potatoes in the crab boil for 15 minutes. Add three dozen shrimp ( or more) and cook another few minutes until shrimp are pink and tender. Don't overcook! Serve with plenty of napkins and red sauce! A touch of Tobasco seals the deal.

I love a shrimp cocktail! Specially if it is spicy.
Try this

2 pounds cooked shrimp, peeled and defined
1 tablespoon crushed garlic
1/2 cup finely chopped red onion
1/2 cup fresh cilantro, chopped
1 1/2 cups tomato and (clam juice cocktail optional)
1/4 cup ketchup
1/4 cup fresh lime juice
lemon
hot pepper sauce
salt to taste
1 ripe avocado - chopped

Mix all the ingredients together and let it set at the least 2 hours for the flavors to blend. It is a great change from the usual when it comes to shrimp. Enjoy
