Soft Sugar Cookies (Gluten-Free)

Ingredients:
2/3 cup shortening
? cup sugar
? teaspoon vanilla
1 egg
4 teaspoons milk
2 cups gluten free flour (see below *)
1 ? teaspoons baking powder
? teaspoon salt
1 teaspoon xanthan gum


Directions:
Cream first 3 ingredients, then add egg and beat until light and fluffy. Stir in milk. Stir together dry ingredients and blend into creamed mixture. Divide dough in half and chill for one hour.

Roll (slightly thick) out on lightly gluten free flour surface (You may need a little gluten free flour on the rolling pin if it sticks). Bake on greased cookie sheet 6-8 minutes at 375F (I used parchment paper and just pulled off the parchment paper and let them cool on the parchment paper on a cooling rack).

* Be careful as the cookies are fragile when warm.

Topping:
I melted a chunk of white chocolate for the frosting and it worked out nicely and then sprinkled with red and green sugar. I think Pillsbury cream cheese frosting is gluten-free, and if so would work well.

Gluten-Free Flour Mix:
You can use any all purpose gluten free flour mix, but I used Bette Hagman’s flour blend:
2 cups white rice flour
2/3 cup potato starch
1/3 cup tapioca flour

Mix the flour and store extra in an airtight container in the refrigerator for future use.

Gluten Free Pumpkin Cookies

INGREDIENTS:
3/4 cup shortening
2 eggs
1 cup canned pumpkin
1 tsp vanilla
1 cup sugar
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp pumpkin pie spice
1 1/4 cup rice flour
3/4 cup potato starch
3/4 cup raisins

PREPARATION:
Preheat oven to 325 degrees F.

Cream together the shortening, eggs, pumpkin, vanilla and sugar. Add baking soda, baking powder, pumpkin pie spice, rice flour, potato starch and raisins.

Mix well.

Spoon out on cookie sheet (greased lightly) about the size of a walnut. Bake for about 15 minutes.

This pumpkin cookie recipe is gluten-free.

Gluten-free Gingerbread Cookies

INGREDIENTS:
2 eggs (or 2 tbsp soft tofu)
2 ounces cream cheese
2 tbsp butter or margarine
4 tbsp molasses
1 1/2 tsp vanilla
3/4 cup soy flour
1/2 cup Ener-G white rice flour
1 1/2 tsp ginger
1 tbsp sugar
2 tsp xanthan gum
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
1/4 tsp cloves

PREPARATION:
Cream together egg (or tofu), cream cheese, butter or margarine, molasses, and vanilla. Mix in remaining ingredients until well blended (about 1 minute) when the sides of the bowl start to come clean.
Preheat oven to 325 degrees.

Place dough on cutting board or flat surface. Roll out dough to 1/4 inch thickness. Cut dough in desired shapes. Place cutouts on greased cookie sheet about 1/2 inch apart.

Bake at 325 degrees for about 16 minutes.

Gluten-Free Coconut Cookie Bars

INGREDIENTS:
1 cup brown sugar
1 cup rice flour
1/4 cup butter or margarine
1 egg, beaten
1 tsp nutmeg
1 cup sour cream
1tsp baking soda
1 cup coconut
1/2 cup pecans, chopped, or other nut


PREPARATION:
Sift sugar with flour. Cut in butter until crumbly. Stir in egg, nutmeg and sour cream mixed with soda. Mix well.
Fold in coconut and pecans. Pour into a well-buttered 9-inch pan.[]p Bake at 350

for 45 minutes or until done. Cut into bars. Serve hot or cold.
This vegetarian cookie recipe is gluten-free and wheat-free.
