Im assuming that u want a recipe for one macoroni dish with only one person eating it. so here it is:

INGREDIENTS

* 1/8 (8 ounce) package elbow macaroni
* 1/8 (8 ounce) package shredded sharp Cheddar cheese
* 1/8 (12 ounce) container small curd cottage cheese
* 1/8 (8 ounce) container sour cream
* 2 teaspoons grated Parmesan cheese
* salt and pepper to taste
* 2 tablespoons and 2 teaspoons dry bread crumbs
* 2 teaspoons butter, melted


DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil, add pasta, and cook until done; drain.
2. In 9x13 inch baking dish, stir together macaroni, shredded Cheddar cheese, cottage cheese, sour cream, Parmesan cheese, salt and pepper. In a small bowl, mix together bread crumbs and melted butter. Sprinkle topping over macaroni mixture.
3. Bake 30 to 35 minutes, or until top is golden.

If the cheese is processed, yes.
If it's just grated cheddar, you need to make a white sauce, then melt the cheese into it.

that's perfect but if you love cheese as much as I do, put some shredded cheese on top after is ready and put it on the oven until cheese is bubbling, mmm delicious!

Sounds like a good recipe. The thing is though, macaroni keeps pretty well in the fridge. If you make enough for two, you can save half of it, and eat the rest tomorrow (just add some extra cheese.)

What I do is make a big casserole, have it a couple of times and freeze the portions that are left. When you want some thaw a portion and then microwave it to heat it. It freezes beautifully.

You're best off just buying the instant packets. They are super easy and it saves a lot of trouble. You just add water so it saves the cost of butter and milk so it's about the same price.
