Yield: 4 servings

1/2 lb spinach, chopped or a 10 oz pkg frozen chopped spinach, thawed
1 tb olive oil
1 tb butter or margarine
1 lb ground beef or turkey
1 onion, diced

1/2 ts basil
1/4 ts marjoram
1/4 ts oregano
1 ts salt
1/4 ts black pepper
4 eggs
If using frozen spinach, place in strainer and drain well. Heat
oil and butter in large, heavy skillet. Add ground meat and cook, stirring, until browned and crumbly. Add onion, and cook until tender but not browned. Stir in spices. Stir in drained spinach and cook until liquid has evaporated. Beat eggs, add to meat mixture and cook, stirring, until eggs are set.

Makes 4 to 6 servings.

RICH SPINACH CASSEROLE

2 (10 ounce) packages frozen chopped spinach, thawed, well drained
2 cups small curd cottage cheese
1 cup cubed process cheese (Velveeta)
3/4 cup egg substitute
2 tablespoons butter or margarine, cubed
1/4 cup all-purpose flour
1/2 teaspoon salt

In a 3-qt. slow cooker, combine all ingredients; mix well. Cover and cook on low for 2-1/2 hours or until the cheese is melted.

1 can golden mushroom soup
1 egg
1-1/2 cups grated sharp cheese
1 tsp. grated onion
1 box frozen spinach (well drained)
1/2 cup melted butter
1 pkg. prepared stuffing mix (Stove Top)

Combine first 6 ingredients. Mix well. Mix in stuffing mix. Turn into a greased casserole dish and bake uncovered in a 325°F oven for approximately 30 minutes.

When I expect a large crowd, I double the recipe. It is a favorite with everyone.

Creamy Spinach Casserole

SERVINGS: 5-6
METHOD: Baked
TIME: Prep: 10 min. Bake: 35 min.

Ingredients:

2 eggs, beaten
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 medium onion, chopped
1 cup (4 ounces) shredded cheddar cheese
2/3 cup mayonnaise
1/2 cup dry bread crumbs
2 tablespoons butter, melted

Directions:

In a large bowl, combine the eggs, spinach, soup, onion, cheese and mayonnaise. Spoon into a greased 8-in. square baking dish. Toss the bread crumbs and butter; sprinkle over spinach mixture. Bake, uncovered, at 350° for 35-40 minutes or until heated through and topping is golden brown. Yield: 5-6 servings.

1 8 oz. cream cheese, room temperature
1/2 cup imitation bacon bits (or real)
1 stick butter, melted
1 cup shredded Parmesan cheese (not grated)- save 2 tbsp for topping

Mix all in greased casserole dish, sprinkle about 2 tablespoons shredded cheese on top, and bake at 350°F for 30 minutes or until bubbly. Enjoy.

Ingredients:

2 (10 oz) packages of frozen chopped spinach (thawed & drained)
1 (16 oz) tub of sour cream
1 (1 oz) package of dried onion soup mix
1 (8 oz) package of shredded cheese (any variety, to liking)

Preheat Oven to 350 F

Mix spinach (thawed & drained), sour cream, and onion mix until well blended. Pour into greased 2 quart casserole/baking dish. Spread shredded cheese over top of spinach mixture. Bake for 25 minutes (or until cheese is bubbly). Enjoy!! : )
