What is that thick cake icing they use in competitions? very manipulatable!?!
Fondat - roll able sugar paste/ stays soft
Gum paste - usually used to make flowers or decoration you want to go hard. Will go rock solid if left out.
Pastiage - This is a mix of sugar, gelatin and vinegar. We us this when make larger show pieces, it will go rock solid but is very fragile.
Chocolate paste - this is a mix of chocolate and corn syrup, it is just like play dough and we use it for many things in the business.
Fonant is found in most craft shops and the others can be purchased from most bakery supply companies.
Good Luck (we are always looking for help in the kitchen.)

Fondant: A typical cake icing made with sugary, syrup and gelatin. It is cooked to a specific temperature (240F), poured over a marble slab, sprinkled with water (to prevent crystallization) and then kneaded to a smooth soft paste. It is often colored and flavored and used for candies and cakes. It can be rolled out and its soft qualities enable it to be draped like fabric.
