What is that thick cake icing they use in competitions? very manipulatable!?!


Question: There are a few things that we use when decorating cakes

Fondat - roll able sugar paste/ stays soft

Gum paste - usually used to make flowers or decoration you want to go hard. Will go rock solid if left out.

Pastiage - This is a mix of sugar, gelatin and vinegar. We us this when make larger show pieces, it will go rock solid but is very fragile.

Chocolate paste - this is a mix of chocolate and corn syrup, it is just like play dough and we use it for many things in the business.

Fonant is found in most craft shops and the others can be purchased from most bakery supply companies.

If you are thinking of the stuff they roll out into sheets and cover the cake, it is called fondant.
