Any healthy recipes using avocado?!


Question: I like avocado and often have them for lunch, but I only have 2 ways of using them.
1 - to cut it half, remove the stone, fill the hole with plain yoghurt, served with wholemeal bread
2 - halve, stone, skin, slice and fan, serve with oil and vinegar dressing and a salad.

As I seem to be eating more of them I'd like some different recipe ideas please.

I love avocado's...in fact, I'm just about to make a dip with them. I mix the avocado w some chopped sweet onion by hand and then sprinkle lemon or lime juice on it!

Make guacamole and use it as a salad topping or eat it with pork, beef or chicken.

Slice the avocados thin and place on a cob salad.

Simple is best.

I like eating it out of the shell with a little salt too.

I put it on sandwiches

I slice it up and add it to a southwestern salad with a salsa vinaigrette

Guacamole is always an option

Very ripe avocados will replace mayonnaise in most recipes. Add 1/4 teaspoon lemon juice per avocado.

I blended avocado half and half with egg yolks to make deviled eggs!!! heavenly.

I dice avocados and toss with tomato and dark green salad greens for a lovely salad.

Mash the avocado, dice the tomato and onion and make guacomole!!!

I had a sandwich is a little restaurant once that was to die for using the avocado. They used "homemade" (they made their own breads) sourdough bread (theirs was cut thick but thin is good too). First went on a small layer of cream cheese on one slice of the bread. Then they took half an avocado, removed the skin and pit, diced it and spread it over the cream cheese. Then they added thin sliced onion, lettuce thin sliced tomato, thin sliced chicken and a handful of alfalfa sprouts. On the top half of the bread they spread a thin coating of mayonnaise and a drizzle of mustard. It was hard to get your mouth around the sandwich and 1/2 of it was a meal in itself. I always took the second half home. I don't remember if it had sliced mushrooms in it or not but I wouldn't be surprised. It was quite awhile ago and the restaurant no longer exists.

You can place slices of the avocado over anything with a cream sauce. I've put diced avocado over a nice tuna salad where the tuna fish mixture is prepared and then mixed into a bed of lettuce and tomatoes (along with radishes, celery and carrots). I've also used it over a tuna salad where the tuna salad mixture is just placed on top of the bed of greens.

You can put it inside a taco, over the top of chili and if you like sushi, inside one of those.

We used to fill the cavity with a mixture of ketchup and mayonnaise. To be really chi-chi we'd add a dash of hot suace and crab or shrimp. Or put the seafood in a parfait glass, layered with chuncks of avocado and covered with the ketchup and mayonnaise mixture.

And, of course, there is guacamole. Mash the avocado with the juice of 1/2 lime, 2 minced or pressed garlic cloves and a diced tomato. Serve with torilla chips.

Then for lunch a BLTA sandwich - Bacon, lettuce, tomato and avocado with a little mayonnaise on toast - is delicious.

Avocados are full of vitamins and the good omega-3 fats so they are heart healty as well as delicious. Have fun.

2 ways I love avocados that you didn't mention: sliced grapefruit with sliced avo and avocado milkshake. It really is a fruit and used as one is delicious. In a blender put 1/2 c milk,4 ice cubes,1 avocado and 1 or more Tbls sugar. It will be very thick. You can add more liquids and other fruits. I wrote about the avo milkshake before and I wonder how many people even consider it. Most everyone I tell this to thinks it sounds horrible. Like I would if someone suggested a tomato milkshake!

Avocado is a yummy smooth vegetable that I love so much. Escpescially on hot bread, like nun. Also if you have anal canal problems, avaocado is a wonderful spread to calm down poop burns. Hoped I help!-MARTY JEAN B.

avocado makes a great guacamole, its also nice in sandwiches or wraps, its good in salads too, italians make one called tricolore which is mozzerella avocado and tomato, a toasted sandwich with bacon and avocado is delicious too, prawn cocktail is made with avocado and its also nice with any seafood, there's so many different things you can do with it.

Baked Crabmeat & Avocado Recipe
Ingredients
1 waldine van geffen


1/4 lb butter
2 can cream of mushroom soup
1 lb lumb crabmeat
1 cup evaporated milk
1 salt and pepper
2 avocados, peel -- slice
2 tbsp bread crumbs
1 butter -- melted
1 can anchovy filets


Directions

Melt butter, add soup and simmer 5 minutes. Stir in crabmeat, milk,
salt and pepper and simmer 5 minutes longer. Line a baking dish with
avocado slices and pour crabmeat mixture over avocado. Sprinkle with
bread crumbs and brush with melted butter. Heat until brown,
approximately 15 minutes at 350~. Before serving sprinkle with a few
drops of anchovy oil and garnish with anchovy strips
