Miss Rhonda is correct, but it also heats more evenly, I am a former chef and for cooking were you need a consistant heat and one that is going to help cook the food evenly, it is the best oven, there are certain things like some cakes, yeast dough products and souffle that should not be cooked in on as they tend to be lopsided.
