CHOCOLATE FUDGE CAKE WITH CHOCOLATE
FUDGE FROSTING

3 sq. unsweetened chocolate
2 1/4 c. sifted cake flour
2 tsp. baking soda
1/2 tsp. salt
1/2 c. (1 stick) butter
2 1/4 c. light brown sugar
3 eggs
1 1/2 tsp. vanilla
1 c. dairy sour cream
1 c. boiling water

Melt chocolate, grease and flour two 9 x 1 1/2 inch pans. Sift flour, baking soda and salt together. Beat butter until soft. Add brown sugar and eggs. Beat until light and fluffy. Add vanilla and cooled chocolate. Stir in dry ingredients alternately with sour cream. Beating well with wooden spoon until batter is smooth. Stir in boiling water (batter will be very thin). Pour at once into pans. Bake at 350 degrees for 35 minutes. Cool cake completely. Frost with Chocolate Fudge Frosting. Can be cooked in 3 pans if you like thinner layers.

CHOCOLATE FUDGE FROSTING:

4 sq. unsweetened chocolate
1/2 c. (1 stick) butter
1 box 10X confectioners' sugar
1/2 c. milk
2 tsp. vanilla

you can use powdered sugar and cocoa powder. with just enough milk to get the texture you want. (you should use more powdered sugar than cocoa though) the cocoa is just to change the color and add flavor.

CHOCOLATE FROSTING OR FUDGE

1/2 c. butter
1 c. flour

Mix like pie crust.

2 c. sugar
1/2 c. milk
1/3 c. cocoa

Cook to full rolling boil. Turn heat down. Boil for 2 1/2 minutes. Add vanilla and flour mixture. Beat.

1/3 c Butter or margarine
1/3 c Milk
1 ts Vanilla

Instructions:
-----------------------------FOR LIGHT FLAVOUR-----------------------------
3 tb Hershey's cocoa

-----------------------------FOR MEDIUM FLAVOUR-----------------------------
1/3 c Hershey's cocoa

------------------------------FOR DARK FLAVOUR------------------------------
2/3 c Hershey's cocoa

Melt butter in small saucepan over medium heat. Add amount of cocoa for
flavour you prefer. Cook over medium heat, stirring constantly, until
mixture just begins to boil. Remove from heat. Pour into small mixer bowl;
cool completely. Add confectioner's sugar alternately with milk, beating to
spreading consistency. Blend in vanilla.
