Plaice is nice, I lightly coat it with a mix of plain flour seasoned with salt and pepper. Then fry it in butter for a couple of minutes.
Lay it on a plate with strip of crispy bacon.
Next in a clean frying pan, melt a large knob of butter, when it starts to go brown and smell slightly nutty, add some mixed herbs and a little lemon juice, then pour over fish and bacon.

how about either swordfish, halibut or tilapia. I put in foil add some extra virgin olive oil, garlic, onions, and italian seasoning wrap the foil like a pocket and put on the grill or oven at 350 degrees for about 15 minuets. Be careful when opening the foil due to the steam releasing.

OK, most fresh fish is good. When you buy it, look for clear eyes, if they are milky or hazy, the fish is not fresh. There are many good ways to cook fish, be sure not to overpower the fish flavour with too many additives. My favourite way to cook fish is pan fry in butter, with white wine and lemon juice. Be sure not to overcook. When the fish is cooked, stir all the left over juices together and slightly thicken it to use as a sauce. It can be served with hot vegetables or cold salad. Enjoy a nice bottle of white wine with it. Bon apetit!!!

haddock mornay is lovely, it haddock in a cheese sauce with bread crumbs on top, cod is nice in a butter or parsley sauce, u could make a seafood risotto

BAKED GROUPER FILLET

1 stick butter
Juice of 1 lemon
1 to 2 lbs. grouper (sole, flounder) fillets
1/2 to 1 c. Vigo bread crumbs (any bread crumbs, but secret is it must have cheese in it)

Wash fillet. Melt 1 stick butter in Pyrex baking pan. Pour juice of 1 lemon in butter; mix. Place fillet on top of butter; turn over in butter to coat. Sprinkle bread crumbs over fillet. Bake at 350 degrees for about 20 minutes, until fish is white when separated with knife and fork. (Do not turn over during baking; the bread crumbs make a nice crust.) Serve with sliced lemon and rice.

BLACKENED SALMON
? lb. (3 sticks) unsalted butter, melted in a skillet
6 fish fillets ? to ? inch thick

Seasoning mix: ( or by Zatarains or Tony’s creole seasoning mix)
3 tbsp. sweet paprika
3 tsp. Salt
3 tsp. Onion powder
3 tsp. Garlic powder
1 tsp. Ground red pepper (preferably cayenne)
1 tsp. White pepper
1 tsp. Black pepper
1 ? tsp. Dried thyme leaves
1 ? tsp. Dried oregano leaves
Heat a large cast-iron skillet over very high heat until it is beyond the smoking stage and you see white ash in the skillet bottom (the skillet cannot be too hot for this dish), at least 10 minutes.
Meanwhile, pour 2 tablespoons melted butter in each of 6 small ramekins; set aside and keep warm. Reserve the remaining butter in its skillet. Heat the serving plates in a 250 degrees oven.
Thoroughly combine the seasoning mix ingredients in a small bowl. Dip each fillet in the reserved melted butter so that both sides are well coated; then sprinkle seasoning mix generously and evenly on both sides of the fillets; patting it in by hand. Place in the hot skillet and pour 1 teaspoon melted butter on top of each fillet (be careful, as the butter may flame up). Cook, uncovered, over the same high heat until the underside looks charred, about 2 minutes (the time will vary according to the fillet's thickness and the heat of the skillet). Turn the fish over and again pour 1 teaspoon butter on top; cook until fish is done, about 2 minutes more. Repeat with remaining fillets. Serve each fillet while piping hot.
To serve, place one fillet and a ramekin of butter on each heating serving plate.
Buttered Noodles
1 package (12 ounces) dried egg noodles
1/4 cup (4 tablespoons) butter, preferably unsalted
Salt and pepper to taste
Chopped fresh parsley for garnish
Cook the noodles in lightly salted water according to package directions. Drain and return to pot. Heat the butter in a small saucepan over medium-high heat until brown, watching carefully to make sure it doesn't burn. Pour the butter over the noodles. Add salt, pepper and parsley; stir until well-combined. Serve immediately.
Green Beans Almondine
1 lb. fresh green beans
1/2 c. cooking oil
1/2 tsp. salt
1 toe garlic, whole
1 c. sliced almonds
Wash and slice green beans 1 1/2 inches long. Toast almonds in oven until light brown. Bring 3 quarts of salted water to a boil. Cook uncovered for 5 minutes, then place beans in ice water to shock them, and keep their color bright green. Refrigerate.
When ready to serve, cover the bottom of a skillet with cooking oil. Add garlic, then green beans and stir fry until heated through. Fold in almonds and serve.

Mahi Mahi- it cooks like a steak...

2 lbs of Mahi Mahi
1 cup red wine
1/2 cup Guiness Beer
2 tbs olive oil
4 cloves of Garlic finely chopped
4 tbs lemon juice
pinch of salt and pepper

Place the fish in a bowl, then add all the ingredients, rub in and allow to sit.

After about an hour, you can either pan sear or grill.

Side-

2 lbs of onions
2 portobello mushrooms
5 button mushrooms
3 tbs olive oil
pinch salt and pepper
1/2 tbs balsamic vinegar
1 lb of cuscus (spelling)
1 tbs sugar

In a bowl, place chopped onions and the tablespoon of sugar and let it sit.

In a pot, place water and allow to boil then place the cus cus.

In a frying pan, place the onions and allow to carmalize, as they turn that brown color you can start adding the mushrooms (slices or dices), balsamic vinegar, olive oil, and salt & pepper. As everything mixes, pull the cus cus out of the flames. Dish out the cus cus in a plate then top the mushroom and carmalized onions on top, the place the fish to the side....

well today i am making a homemade fisherman's pie for my son and his dad this is simple and quickly and easy to make
fresh get some fish of your choice we will start with some big pieces of cod put it in a saucepan of milk cook the fish until its tender drain the fish keep the milk what the fish was cooked ,get a dish break up the fish diced onions mix well then with the fish milk add some plain flour a bit of melted margarine add grated cheese that's your sauce for your fish pour it over the fish then boil up some potato mash them up when cooked then put it on top of your fish. grate some more cheese grate it over the mashed potato and pop it in the oven until its piping hot and its golden brown on top.

NB oily fish such as mackerel sardines and other oily fish etc cant be used

fish tacos

Ingredients :
8 ready-made taco shells
250g fish fillets (pollack or whiting are best)
1 avocado
6 medium tomatoes
1 small onion
2 red onions
2 lemons
8 lettuce leaves
1 tablespoon chopped coriander
1 tablespoon oil
? green chilli (to taste)
1 pinch castor sugar
salt & pepper


Recipe :
Boil 4 tomatoes, peel, remove seeds and chop. Mix with small chopped onion, chopped and seeded chilli, coriander and sugar. Season.
Slice the red onions.
Peel the avocado, dice and sprinkle with lemon juice.
Chop the two remaining tomatoes.
Heat oil in a frying pan. Cook the fish for 2 minutes on each side. Pull flesh apart with a fork, season and sprinkle with lemon juice.
Put a leetuce leaf in each taco shell, then the diced tomaoes, followed by the fish, avocado, red onion and spicy sauce.
Garnish with chunks of lemon.
