Chicken Scampi
I toss the extra sauce with pasta
INGREDIENTS
* 5 (4 ounce) skinless, boneless chicken breast halves - cut into 1 inch strips
* 1/4 teaspoon ground black pepper
* 3 tablespoons grated Parmesan cheese
* 1 tablespoon dried parsley
* 1 clove garlic, minced
* 1/4 teaspoon salt
* 1 teaspoon dried oregano
* 3 tablespoons lemon juice
* 3 tablespoons Worcestershire sauce
* 1/4 cup white wine (chicken stock)
DIRECTIONS
1. Combine chicken with ground pepper, cheese, parsley, garlic, salt, oregano, lemon juice, Worcestershire sauce and wine in a shallow bowl. Marinate in the refrigerator for several hours (overnight is best).
2. Preheat broiler. Remove chicken from marinade (save marinade) and place in a shallow pan. Broil 8 inches from heat, turning once, until chicken is no longer pink inside (about 15 minutes).
3. In a small saucepan, bring marinade to a boil. Pour over chicken, toss and serve. Yummy!

All in one meatloaf, really yummy!
3 tablespoons vegetable oil
2 pounds cabbage -- coarsely shredded
1 medium yellow onion -- thinly sliced
1 1 lb. can tomatoes with their juice -- chopped
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1 2/3 cups beef broth
3/4 cup long-grain white or brown rice
2 large eggs
1 pound lean ground beef
3 tablespoons soft bread crumbs
4 scallions, including tops -- thinly sliced
1/2 cup swiss cheese, 1 oz -- shredded
1/4 teaspoon dried thyme -- crumbled
2 tablespoons minced parsley
Directions
Preheat the oven to 350. Spread the oil in a 14 x 11 x 3" baking pan. Add the cabbage, onion, tomatoes, sugar and half the salt and pepper and mix well. Cover with foil and bake for 45 minutes, stirring occasionally.
Meanwhile, bring the stock to a simmer in a medium saucepan over medium heat. Stir in the rice, reduce the heat to low, cover and simmer till all the water is absorbed - 20 minutes for white rice and 35 - 40 minutes for brown.
In a large bowl, beat the eggs lightly then add the beef, 2 T. of the bread crumbs, 1/4 cup of the scallions and the rest of the salt and pepper and mix well.
Cover a 12 x 10" sheet of wax paper with the remaiing T. of bread crumbs. Pat the beef mixture firmly on top of the crumbs so the paper is entirely covered and set aside.
Mix the cheese, thyme and remaining scallions into the rice and spread on top of the beef, leaving a 1" border all around.
Begining with a long edge, roll the beef up jelly roll fashion, pulling off wax paper as you go. When you reach the end of the paper, pinch the meat together at both ends, enclosing the rice, then pinch the seam to seal.
Remove the baking pan from the oven and push the cabbage mixture to the sides with a wooden soon. Using the wax paper to help lift the beef roll, place it seam-side down, in the center of the pan. Bake, uncovered for 40 minutes. Sprinkle with the parsley just before serving
