What happens if you don't soak potatoes in cold water before frying them?!

Question: Recipes for French Fries say to soak the potatoes in cold water before you fry. I read somewhere that you do this to remove starch. What if you didn't? What would happen?

Before frying potatoes, rinse them in cold water to remove starch, which can cause the potatoes to stick together during the frying process. For crispier potatoes, soak the potatoes in salt water for several minutes before cooking.

I never soak my potatoes in cold water before frying them and have never had any problems they come out fine.

You don't soak am in water at all, just wash them in water. If you soak em...it will spladder all over you while you are frying them. They have to be as dry as possible.
.

That's some goofy crap right there.
I've never soaked my spuds before frying them.
I don't even peel my taters......why the hell would I soak them.?

I don't soak mine either prior unless I am cutting them up during the day to save time later. It is true that it will remove the starch, which is a good idea, but not necessary, unless you are trying to cut out as much starch as you can. Nothing will happen, you can do it either way.

The potatoes have a tendency to turn brown.

When you fry them, they may brown faster while the inside might still be hard or raw.

Yes, that is my real last name!

You will get a better french fry if you soak the potatoes in cold water. I slice them into fries and soak in ice water for 1 hour. You will see all the starch in the bottom of the bowl. I remove the water and starch and rinse potatoes at lay out on paper toweling to dry. I have found that they cook up much more brown and crispy than if you don't remove the starch. I find it worth the extra time.

You don't have to but.........if you don't peel the skin you need to wash them.So it's up to you.If you want to do if not then don't.As some people say "Whatever floats your boat" Lol

The only thing I ever knew about soaking potatoes was that it removed potassium.
