I need a great recipe for breakfast casseroles?!
i'm not a morning person but my kids are and they LOVE breakfast so i cook but i would love to 'cheat' and make easy egg casseroles. or anything else that would make a great breakfast.
Answers: please dont post a recipe you havent tried, i know how to google recipes! lol but i trust people over websites, so if you tested a recipe i would love to try it!

Sausage Breakfast Casserole
1 lb. breakfast sausage, browned and crumbled (chopped ham is good, too)
12 eggs
2 cups milk
2 tsp. salt
1 cup grated Cheddar cheese
2 tsp. dry mustard
6 cups cubed, stale French or Sourdough Bread
Place cooked sausage on the bottom of a greased 9" x 13" baking dish. Add bread evenly on top. Beat eggs, milk, and seasonings. Pour over sausage and bread. Sprinkle cheese on top. Cover with foil. Refrigerate overnight. Before baking, press bread down gently into casserole dish. Bake 350o for 50 minutes or until light golden brown and set in center. Serves 8.

Farmer's Brunch Casserole
3 cups shredded hash browns or sliced potatoes
3/4 cup (3 oz.) shredded Monterrey Jack Cheese
1 cup diced fully cooked ham
? cup sliced green onions with tops
4 beaten eggs
1? cups milk
? tsp. pepper
Optional ingredients: Sliced fresh mushrooms or diced green bellpeppers
Preheat oven to 350°. Spray 2 quart baking dish / pie plate with nonstick spray. Arrange
potatoes evenly in the bottom of the baking dish. Sprinkle with cheese, ham and green onions.
Combine milk, eggs and pepper. Pour over potato mixture. Bake uncovered for 40-45 minutes until center appears set. Let stand for 5 min. before slicing. Serve with fresh melon wedges and fresh berries and sweet bread / muffins.

Sugar Pie's Blueberry-Stuffed French Toast Casserole
Nonstick cooking spray
9 eggs, beaten
2 cups milk
? cup melted butter
? cup maple syrup
12 cups cubed stale French bread
1 (8 oz.) package cream cheese, cut into small cubes
2 cups fresh or frozen blueberries
Blueberry Syrup or maple syrup (optional)
Preheat oven to 350oF. Grease a 3-quart rectangular baking dish with cooking spray; set aside.
In a smaller bowl combine eggs, milk, butter, and the ? cup maple syrup. Whisk until combined. Place bread cubes in large bowl; add cream cheese and the blueberries. Slowly pour the egg mixture over blueberry-and-bread mixture; gently fold mixture to evenly moisten the bread. Pour into greased casserole dish.
Bake 40 to 45 minutes or until a knife inserted near the center comes out clean. If necessary, cover with foil the last 10 minutes of baking to prevent overbrowning. Let stand 10 minutes before serving. Cut in squares. Serve with Blueberry Syrup or additional maple syrup, if desired. Makes 12 servings.

Okay, but remember it's really fattening. Absolutely delicious, though! You need to start it the night before, which actually makes it more convenient.
Hash Brown & Sausage Casserole
INGREDIENTS
? 3 tablespoons butter
? 1 small yellow onion, chopped
? 4 cups frozen shredded hash browns
? 8 cups cubed French or Italian bread, crust removed
? 1 pound bulk sausage, mild, hot or sage
? 2 cups (1/2 pound) shredded Gruyere cheese (or just use whatever kind you like except Parmesan...it needs to be shredded).
? 2 1/4 cups whole milk
? 8 large eggs
? 1 teaspoon salt
? 1/4 teaspoon freshly grated nutmeg (or 1/2 teasp. already ground)
? 2 tablespoons Dijon mustard
DIRECTIONS
1. Spray deep 13x9-inch casserole with vegetable oil cooking spray. Cover bottom with the bread cubes. Melt butter in a large frying pan. Add the onion and sauté over medium-low heat until soft — about 5 minutes.
2. Add the hash browns and break apart. Sauté until soft — about 5 minutes. Spread the onion and hash browns evenly over the bread cubes.
3. Sauté the sausage in the same pan as the potatoes, breaking apart large clumps. When the sausage is cooked through, remove it with a slotted spoon and distribute it evenly over hash browns (I like to put it on paper towels first to get more of the grease out). Distribute the shredded cheese evenly over the sausage.
4. In a large mixing bowl, combine the milk, eggs, salt, pepper, nutmeg and mustard — whisk briskly to blend. Pour over the cheese. Cover with plastic wrap and chill overnight or at least 8 hours.
5. Remove the casserole from the refrigerator 30 minutes before baking. Preheat oven to 350 degrees. Bake, uncovered, for 45-50 minutes, until puffed and golden brown.
Layer ingredients in a baking dish the night before, then cover and refrigerate. In the morning pop the casserole into the oven about an hour before serving.
Farmer's Casserole
Makes 6 servings
Ingredients
2 1/2 cups frozen shredded hash brown potatoes, or Tater Tots
3/4 cups shredded Monterey Jack with (optional) jalapeno peppers
1 pkg. Knorr's Leek Soup mix
1 cup chopped fully cooked ham or Canadian bacon (optional)
1/4 cup sliced green onion
4 beaten eggs or 1 cup egg substitute
1 - 12 oz. can evaporated milk (or 1 ? cup evaporated skim milk)
1/4 tsp. pepper
1/8 tsp. salt
1/2 lb. asparagus or mushrooms, washed and cut into 1" pieces
4 to 5 tomatoes, coarsely chopped
Spray a 2-quart square baking dish with Pam. Arrange potatoes evenly in the bottom of the dish. Sprinkle cheese, ham, green onion over all. In a mixing bowl combine eggs, milk, pepper, salt, soup mix. Pour over mixture in baking dish. Sprinkle with Crazy Jane's salt and/or Mrs. Dash. Cover with foil or plastic wrap and refrigerate overnight. ext morning bake uncovered at 350 for 1/2 hour. Remove from oven; add asparagus or mushrooms and tomatoes. Bake for another ? hour until golden brown. Let stand 5 minutes before serving.
I made this , this past weekend. Fried up some potato's in onions and pieces of bacon. When it was pretty much done, I added cut pepperoni, I had on hand , shredded Mozzarella, fresh basil. I am sure you can add some Tomato to it and it would turn out just as good. Add 4 eggs and 1/2 cup of milk mix and pour over you potato mixture, bake for about 20 Min's on 350.
6 slices bread cut in 1" pieces
12 eggs
1/4 cup milk
1lb sausage
1-1 1/2 cup shredded cheddar cheese
2T dry mustard
2 T minced onion
1/2 tsp salt
1/4 tsp pepper.
brown sausage and drain.,
mix eggs,milk,s & p,mustard,onion.
add sausage,bread and cheese.
put in 9"x13" baking dish
bake for 30 min (check after 20 min)
makes lot but i am single and i cut in portions and wrap in foil and freeze.freezes well.
reheat in microwave.depending on portion size
