Can I "make buttermilk" with nonfat milk?!


Question: I read that in order to make buttermilk, I could add a Tbsp of lemon juice or vinegar to one cup whole milk and wait at least ten minutes. Can I do this with nonfat milk?

Yep. It's the protein you're curdling, not the fat. Nonfat milk has the same protein as whole milk.

Interestingly enough, store-bought buttermilk is considered a low fat milk product, too. It's less than 2% milkfat.

I think it would work, your really just creating sour milk
