Rice 6 tablespoons
Almonds 1 1/4 cups
cinnamon 1 cinnamon stick
lime zest 3 2" not white pithy stuff
sugar 1 cup

Pulverize rice , combine almonds, lime zest and sugar
Let stand overnight
Place mixture in a blender for 3-5 minutes
Take mixture and pour it in a large sieve over a bowl lined with cheesecloth. After fluid is drained , drain cheesscloth of an added liquid
add 2 cups of water and sugar to liking . If thick, add water and refrigerate
Place in a tall glass with ice

1 cup long grain rice, rinsed
2 quarts water
1 cinnamon stick, broken into pieces
1 teaspoon vanilla (optional)
1/2 cup white sugar

DIRECTIONS
In a large saucepan, combine rice, water and cinnamon stick. Set aside for 3 hours.
After 3 hours, bring to a boil, reduce heat, and simmer for 30 minutes. Allow to cool.
Puree rice mixture in a blender until smooth. Strain through cheesecloth or a fine sieve. Flavor with vanilla and sugar to taste. Chill, and serve over ice.

Here is an easy recipe:

1 quart nonfat milk
2 quarts water
4 cinnamon sticks
1/4 cup rice flour or 1/3 cup raw white rice crushed to a powder in blender
3/4 cup sugar
1 tablespoon vanilla extract

Pour the milk into a wide skillet and bring to a boil. Reduce to a simmer and cook, stirring frequently, until reduced by half, 2030 minutes. Strain into a large saucepan and add the water and cinnamon sticks.
Bring to a boil, reduce to a simmer and cook 5 minutes. Remove from the heat and let sit 15 minutes. Remove the cinnamon sticks and reserve.

Combine the rice flour, sugar and vanilla in a bowl. Pour in the milk mixture and whisk to

incorporate well. Refrigerate at least 4 hours. Then pour the liquid into a pitcher, discarding the sediment that has settled on the bottom of the bowl. Serve cold over ice, with cinnamon sticks as stirrers.

Chill and stir before serving over ice.
