couple of quick recipes for ya....
Brasato di funghi

2 lbs Portabello mushrooms
4 cloves garlic sliced
4 tbsp olive oil plus 2 tbsp
2 ounces pancetta
1/2 tsp red pepper flakes
1 28 ounce can of tomatoes drained and chopped
1 cup red wine
2/3cup fresh bread crumbs

in a large saucepan saute the pancetta and garlic....add the red pepper flakes and cook for 2 more minutes...add the mushrooms and season with salt and pepper...cook until the mushrooms release all their juices and juices have evaporated...add tomatoes and red wine....bring to a simmer...partially cover with lid and simmer on med low for 20-30 minutes

in a small pan add 2 tbsp of olive oil add bread crumbs and cook over med high heat till brown...serve over the top of the mushrooms....this is a great side dish or served over steaks!!


You can also just make a nice pannini with the mushrooms...saute the whole mushrooms in butter till lightly browned....drizzle olive oil and red wine vinegar over your baguette or roll....add provolone or mozzerella cheese..add some roasted red peppers....lettuce... tomatoes...drizzle oil on the outside of the rolls....place in a hot pan and and place a weight on the top of the sandwich(maybe another pan) and brown...turn over and cook till cheese is melted

Saute on both sides. Place on a pan, top side on the bottom. Pile on some feta cheese, spinach, garlic and cover with tomato sauce and bake until all warmed through. You can always change the ingrediants to what you like.

My favourite is Chicken Marsala. You'll have to get some Marsala wine. I don't have the recipe but you should be able to find it with a quick search - there are many!
