Any good vegetable recipes?!


Question: Every time I'm at the grocery store I always buy extra vegetables because I want to try different veggie dishes, Sometimes when me and my boyfriend would go out to his moms for dinner she would make this carrot dish that I absolutely loved! so every time I saw she made it I was pretty happy:) Then finally one day I had a bunch of carrots and decided to call her and just get the recipe myself. Now I make it almost ever other week, and lost focus on trying new vegetable dishes. I never seem to make anything else, I usually just cook them and serve them as they are. But I'm in despriate need of some new recipes, please please help, anything will help! I especially love broccoli, if you have any broccoli recipes that would be great, but I love ALL vegetables

Here are some of our favorites:

Caesar Coleslaw

1 pkg pre-made coleslaw
1/4-1/2 cup shredded parmesean cheese
1/2 pkg caesar croutons
1 bottle creamy caesar dressing

Toss first three ingredients together. Add enough dressing to coat. It's even good the next day!

Lemon Broccoli

2-4 bunches broccoli
? cup butter
1 Tbsp. lemon juice
? tsp seasoned salt
Pepper to taste

Steam broccoli until tender-crisp. Drain water. Add next 4 ingredients to hot pan. Stir until coated.
Cucumber Salad

Slice 2 peeled cucumbers. Slice thinly. Add 1 small sliced or chopped red onion. Cover with bottled red wine vinaigrette dressing. Salt and pepper to taste. Best if you let sit in refrigerator for at least an hour.

Bacon Salad

4 slices bacon
1 lg bowl salad greens
? chopped red onion
Salt
Pepper
Red Wine Vinegar

In salad bowl, combine the salad and onion. Coat with ? cup red wine vinegar, salt and pepper. Chop bacon into little pieces. Cook until crispy. (You may need to add a little olive oil if bacon is very lean). Pour bacon and grease over salad.

Broccoli Cheese Salad

4 cups broccoli, cut into small pieces
1 red onion, chopped
1 cup cubed cheddar cheese
6 slices bacon, cooked, crumbled

Combine above ingredients. Combine 1 cup mayonnaise, ? cup sugar, and 2 Tbsp vinegar, salt and pepper to taste. Pour over salad.

I love new veggie recipes too. This isn't broccoli sorry, but I have an old recipe that I make everytime I make breaded pork chops. Its potatoes, carrots ,onions and turnips. All cut small and equal parts , cooked tii soft, mashed warm, salt pepper, a little nutmeg and butter. Quite yummy indeed.

SWEET AND SOUR VEGETABLES

1 lb frozen Oriental Vegetables
peanut oil (for sautéing)

Sauce:

1 tablespoon corn starch
1/2 inch section fresh ginger, peeled, minced
1/2 cup pineapple chunks, drained and reserved
3 tablespoons dark brown sugar
1 tablespoon rice vinegar
1/2 teaspoon soy sauce (or salt to taste)
1/2 cup pineapple syrup or juice (from can)
1 clove garlic, minced

Combine ingredients for sauce in a small bowl and set aside.

In a wok, heat 2 tablespoons of peanut oil until sizzling hot. Add vegetables; stir fry over high heat until vegetables are slightly browned on edges, but still bright, crisp, and barely tender. Oil in wok must be very hot to avoid vegetables becoming overcooked - cook rapidly and for a short period of time. Remove vegetables to serving dish.

In the empty, still-hot wok, drain all but 1 teaspoon of oil. Add sauce ingredients in the same order as listed. Cook 5 minutes or until sauce is translucent and cornstarch has cooked. Add garlic during final minute (do not allow it to brown).

I usually just steam my veggies, or roast or stir fry. The brocolli would be great in a stir fry. When cooking, add a little sesame oil, soy sauce, fresh or dried ginger, and fresh garlic.

Here is my famous BROCOLLI CASSEROLE

2 BOXES FROZEN CHOPPED BROCCOLLI DEFROSTED

1 CAN CREAM OF MUSHROOM SOUP

3/4 CUP SOUR CREAM

1 CUP CHOPPED CELERY

1 TEASPOON SALT

1/2 CUP SHARP SHREDDED CHEDDAR CHEESE

COMBINE AND BAKE AT 350 DEGREES FOR 30 MINUTES

U CAN BAKE 2 CASSEROLES AND SERVE ONE AND FREEZE ONE
AND THEN PUT IN OVEN FOR SPECIAL OCCASSION.. enjoy!!

Broccoli Salad

8-12 servings 30 min 30 min prep

1-2 head fresh broccoli (do not use frozen!)
1/2 cup red onions, chopped
1/2 lb bacon
2 1/2 tablespoons vinegar
1 cup Hellmann's mayonnaise
1/3 cup sugar
1 1/2 cups grated mozzarella cheese


Cook bacon (I make it easy and buy the already cooked bacon in the refrigerator section) and crumble into pieces.
Chop up top of broccoli into bite size pieces.
Mix broccoli, onions, bacon and mozzarella in large bowl.
In separate bowl combine vinegar, sugar and mayo.
Pour over broccoli mixture and toss to coat.
Best if made a day ahead.

A good basic veggie recipe that is a great side dish to almost anything or the main dish is just put some olive oil about 1tsp in a pan, chop up about a half of onion, 3 garlic cloves (chopped). Put the pan on the stove top on medium heat, with the oil in it. Put in onions and garlic and sautéed until onion turns translucent. Add in other chopped veggies this would include broccoli florets, green/red bell pepper, zucchini, any sort of veggie would work. and just stir fry until the broccoli is tender, and serve! You may need to add a little water to keep the veggies from burning...Add salt and pepper to taste.

parsnips! i love em..there amazing...buy some skin em chop em. toss in sautee pan with a little oil salt and pepper...get em tender then add butter and balsamic vinegar with honey. about a 1/3 ratio. try that and your mother in law will be begging you for the recipe. its simple full of flavor and contrast and sure to impress. parsnips with balsamic honey glaze ( the butter added to it will give it a glossy full flavor affect) be sure to use real butter though substitutes wont work.

Broccoli, carrots, red pepper, whole green beans
Add all to a pan with some butter and sprinkle some Morton seasoning blend on it. Oh so good.
