Cumin is a tough spice to substitute for, it has a fairly unique, savory aroma and taste, with a light citrus/lemon hint to it. A combination of oregano and a bit of coriander might get in the neighborhood, but it'll still fall well short.

Cumin is commonly used in commercial chili mixes and powders. If your enchilada recipe calls for some dried chile, garlic and cumin, your safest bet is to replace all of them with a pre-blended chili powder.

If this is a recipe that your guest/family already know and love, they'll definitely notice the missing ingredient, although they may not know what it is. If the guests have never had your enchiladas before, I'd say leave it out if you can't do the chili powder substitution.

Happy cooking!

I have never tried this but I am told you can use caraway seeds (use half as much); or caraway seeds plus anise seeds; or curry powder. You can mix a dash in a spoon of the sauce to the side to see if you like it before adding it to the full batch. Another option is to go for a "mole" taste and use a little peanut butter and cocoa powder. Good Luck!

pepper, cinommin

If you have any chili powder it has cumin in it along with other spices.

liquid smoke
