Cheddar Spirals

Our kids just love this and will sample a spoonful right from the slow cooker. Sometimes I add cocktail sausages, sliced Polish sausage or cubed ham to the cheesy pasta for a hearty all-in-one dinner.

INGREDIENTS
1 (16 ounce) package spiral pasta
2 cups half-and-half cream
1 (10.75 ounce) can condensed Cheddar cheese soup
1/2 cup butter, melted
4 cups shredded Cheddar cheese

DIRECTIONS
Cook pasta according to package directions; drain. In a 5-qt. slow cooker, combine the cream, soup and butter until smooth; stir in the cheese and pasta. Cover and cook on low for 2-1/2 hours or until cheese is melted

EASY CROCK POT LASAGNA

1/3 cup water
8 lasagna noodles
1 4 1/2 oz can mushrooms
1 15 oz carton ricotta cheese (optional)
2 cups shredded mozzarella cheese

Brown meat and seasoning, drain.

Mix spaghetti sauce and water. Place 4 uncooked noodles in lightly greased crockpot.

Layer with beef mixture, sauce and mushrooms.

Spread evenly with ricotta cheese and sprinkle with 1 cup mozzarella.

Layer with remaining noodles, meat, sauce mixture, mushrooms and mozzarella cheese.

Cover, cook on high 1 hour.

Reduce heat and cook on low 5 hrs.

Yield: 4 servings

I swear this works and in a large crock pot, the cooking time is even slower.

Cut several chicken tenders into bite-size pieces and sautee in a skillett until cooked through. Mix 3 TBSP flour into meat and cook a minute or so. Into crock pot, dump in order: 1 red onion diced or chopped in small pieces, 1 can mushroom stems and pieces (you should chop the larger pieces down), the chicken pieces, and a quart of chicken broth. Top with parsley and dash of black pepper. Cover and cook on low for 8 hours. It will be thick and bubbly. When you get home, add a pkg of frozen peas and carrots, cover again and turn to high for 1/2 hour. Meanwhile, bring 3 cups chicken stock to a boil and add 1-1/2 cups white rice. Return to boil, add a pat of butter and cover. remove from heat and let sit undisturbed for 20 minutes. Uncover rice, fluff with a fork. Put 1/3 cup rice on each plate and top with chicken mixture. For dessert, have diced pears in light syrup and chocolate chip cookies. Enjoy! Rob R
