Making a chicken enchilada casserole...?!


Question: Do I have the top layer end with the chicken and sauce and then put cheese on it or layer it with the corn tortillas sauce and then cheese?

Corn tortillas , sauce then cheese.

Absolutely doesn't matter.

I usually top the chicken with tortillas, then sauce, then cheese.

Layer it with the corn tortillas and sauce then top with remaining cheese.

I'd be interested in the answers you get. I, personally would do the chicken then sauce and then cheese. If the corn tortillas are too near the top, they can get hard. Also, be sure to start with the sauce so your bottom tortilla doesn't get hard.

When I make my chicken enchilada casserole, they are with the white sauce and rolled up, not layered.

If you ever want to serve a wonderful appetizer/casserole, buy those tostitoes (the beef and cheese kind) - in the frozen food section. Put a layer in a casserole dish, pour a can of the green enchilada sauce over it and cover that with a layer of cojack or cheedar cheese and bake 350o for 20 minutes or until all is bubbly. It is a real hit. The green enchilada sauce comes in mild and hot - not sure about medium - but the mild is kind of spicy.
