Stand the shell on a bed of chive mash (to soak up any juices) and to stop it toppling,
Needs nothing more than a good salad, and a bottle of something special!
Should you need more than one course - start with oysters or palourdes farcis and a chocolate mousse with brandy or water ice to follow.
It's kind of a meal in itself...instead serve a meat course afterwards.

A simple green veggie dish like green beans and garlic and a nice dessert, nothing too "Overboard" as this dish is already rich and you want it to be the "center of attention" I'm sure!
I use to serve it with spinach salad and brushetta or shrimp cocktail...
Shrimp Brushetta -
5 ounces (1/2 C + 2 T) red pepper,chopped fine
5 ounces green pepper, chopped fine
5 ounces red onion, grated
1 pound 9 ounces petite shrimp (I don't know if this is canned or fresh!)
3 C Fontina cheese, grated
3 c White Cheddar Cheese, grated.
Large loaf of French bread, or Italian bread, cut 1/2" to make 48 pieces.
Mix all ingredients together except bread.
Place heaping onto each piece of bread and put on a cookie sheet. Put oven to 350 degrees, bake for 6 minutes til cheese melts.
A crisp fresh UNDRESSED green salad and a warm crumbly dinner roll, you do not want to take anything away from the glorious Lobster

BRIE POTATOES
Serves 6 to 8
6 (about 3 lbs) baking potatoes
12 oz cold brie with rind removed, diced
1/3 cup finely chopped chives
1/3 cup sweet butter (unsalted), cut in bits
1 1/2 tsp salt (or to taste)
1/4 tsp freshly ground white pepper
Cook potatoes in salted boiling water until tender, about 30 minutes. Drain and peel. Coarsely mash pototoes. Fold in remaining ingredients until well combined. Put in an oven-proof dish and bake at 450 degrees until hot, about 10 minutes.
Also,for a veggie, steam cut-up carrots until tender crisp and toss with butter and maple syrup.
Keep it simple, just the way lobster is supposed to be. I served this at Christmas. I served it with a simple Green salad. It went down a treat.
