i fry fresh fish every week and the best batter i make is flour vinegar and water, it needs to be thick,or you could do a skinny batter for people who are on diets is make it very watery, and you get a thin batter.

For a general fish batter i usually use equal parts flour and cornmeal and then flavor it up with Tony Chechere's Creole seasoning, otherwise some other seafood seasoning with salt and pepper and paprika, and some cayenne pepper...just flavor the flour/meal mixture until you can see the colors of the spices decently thru and thru..thats really all i do...otherwise the stores make pretty decent "fish fry" batter packages...much more fun to do it yourself tho...but first you want to rinse your fish off with cold water and let dry most of the way..then drag it thru some whole egg bath, then cover as liberally as wanted with your batter mixture then fry away..remember not to fry in too hot heat if doing it in pan
I worked in a pub that is famous for it's fish and chips. We used Drakes Crispy Fry mix and added flat beer to make the batter. Make sure the cod is really dried off before dipping into batter.

1/4 cup Zesty Italian Dressing
6 cod fillets (4 oz. each)
1 can (10 oz.) diced tomatoes and green chilies, drained
1/2 cup Mexican Style Shredded Cheese
PREHEAT oven to 425°F. Pour dressing into 8- or 9-inch square baking dish; top with fish.
POUR tomatoes and green chilies over fish; sprinkle with cheese.
BAKE 10 min. or until fish flakes easily with fork.

Cod Fish Cakes [4 serv; ready in 50min]
3 tablespoons olive oil
1 large onion, finely chopped (about 1 1/2 cups)
1 1/2 teaspoons salt
1/4 teaspoon fresh ground black pepper
1 1/4 lbs fresh cod, bones removed
2 tablespoons finely chopped fresh tarragon leaves
1 egg, lightly beaten
3 dashes Tabasco sauce (to taste)
1/3 cup fine dry breadcrumbs
Heat oven to 200*F. Heat 1 TBS olive oil in a skillet over medium heat. Add onion, 1/2 tsp salt, and 1/8 tsp pepper. Cook until the onions are translucent, about 5 minutes. Set aside.
Cut fish into large chunks; pulse in a food processor to coarsely chop. Transfer to a medium bowl. Add onion, tarragon, egg and Tabasco, combining well. Add remaining salt and pepper. Form 8 3-inch patties; dredge them in bread crumbs, shaking off excess.
Heat 1 TBS oil in a large skillet, over medium low heat. Cook 4 patties until browned, about 4 to 5 minutes on each side. Remove to a baking sheet, cover with aluminium foil, and keep warm in oven while you cook the other 4. Wipe out skillet, return to heat and add remaining oil. Cook remaining patties and serve immediately with tartar sauce.

Marinate the fillets with garlic -ginger and onion paste ( not much)and a little vinegar and salt for a while
Dip the fillets in beaten egg and roll the them in bread crumbs . Fry in hot oil.
1.5 cups all purpose flour
1/2 cup cornstarch
1 tsp salt pepper
1/2 tsp cayenne
Mix and measure out 1/2 cup and put on a sheet pan
add 1/2 tsp baling soda to flour mix still in bowl
Add 12 oz beer (not dark) and mix.
Cut up cod to even pieces and flour in reserved flour.
Then take prefloured cod and dip in batter and then toss back in reserved flour and let sit until you are done.
You want your oil at 375 F. Toss in cod and fry until golden. (It will float)
The cornstarch doesnt produce glutten so it will not be too doughy. Also the soda powder gives of CO2 when it hits the heat so it makes batter airier than the old fashioned heavy oily batter from pubs of old.
Equal parts of flour and stale beer.
Let sit out at room temp.before using.
Dust fish with seasoned flour and dip into batter.

1 cup dark beer, room temperature
Whisk flour , salt and pepper in bowl, pour in dark beer, whisking until the batter smooth. Let stand for 15 minutes.

3 cups flour
1 egg, beaten
2 tablespoons paprika
1 teaspoon red pepper
4 tablespoons seasoned salt
1 1/2 cups milk
1/2 teaspoon salt
1 teaspoon sage
1 teaspoon thyme
1 tablespoon chili powder
Beat all ingredients together. Dip fish into batter and deep fry until golden brown.

6oz SR Flour
1/2 teas. BP
pinch of salt

A lovely crisp golden tasty batter
This is going to sound weird but I use this batter for everything . It comes out buttery tasting
1 package ritz cracker crushed fine
1 cup all purpose flour
1/4 old bay seasoning (if you can't fine recipe on bottom)
salt and pepper
2 tablespoons of lemon pepper (optional)
1 small bottle of buttermilk to soak fish
Mix first 5 ingredients
soak fish in buttermilk then in flour mixture fry in peanut oil if you want more batter on fish dip first in flour mixture then in buttermilk then back in flour mixture .
Old bay can be bought in grocery store but here is the recipe if you can't find any .
Old bay :1teaspoon each celery salt, red pepper,black pepper, bay leaves not whole crushed 2 cloves crushed , allspice , cardamon and paprika
i use bitter beer not expensive beer just cheap and chearfull
what i do is pour half a can into a mixing bowl add some salt and white pepper then i add to this self raising flour a bit at a time and whisk it in until the batter is the consistancy of slightly thich evaporated milk i now leave this to stand for an hour befor i use the batter .
now i get my cod season it and dip into flour and now i dip the fish into the batter and put into the hot fat/oil and cook until cooked .
this produces a crispy batter and a perfectly cooked piece of cod.
if you wish you may add a bit of vinegar to the batter before you use it this batter works every time and i have been useing it for over thirty years as a proffesional chef
Long John Silver's Batter (clone)
2/3 cup club soda
1/3 cup lemon juice
1 egg
1/2 cup Bisquick
1/2 cup self-rising flour
Beat all ingredients together until smooth; let stand 10 minutes.
Heat oil to 385 degrees F.
In small bowl put 1/2 cup club soda, in another 1/2 cup self-rising flour. Dip fish first into soda, then into flour. Set fish on cookie sheet till all the fish has been coated; let dry a few minutes.
Dip fish in batter, let excess drip off; and deep fry 3 or 4 minutes per side.
