Another of my late grandmas receipes?!


Question: PITCAITHY BANNOCK.
HALF A POUND OF BUTTER
QUARTERPOUND OF RICE FLOUR
2OZ OF CANDIED PEEL
ORANGE PEEL
THREEQUARTERPOUND OF FLOUR
2OZ OF SWEET ALMONDS
QUARTERPOUNDOF CASTOR SUGAR
A LITTLE FLAVOURING

warm butter slightly beat to a cream blanch and chop almonds and shred peel very finely mix all together with cream butter and knead with hands until it forms a lump this will take some time USE NO LIQUID. form into a round flat cake about 1and half inches thick, prick all over with fork.
Place on a baking tin and tie a band of double paper round it, bake in moderate oven for 1 to 1half hours,

the flavouring she used was vanilla or almond.

This sounds really nice!! I'm Scottish and I've never heard of this recipe even though it sounds like it might come from my homeland!! My Mum is wheat intolerant so we have to watch what we make with normal flour but there may be a a way for her to convert the flour amounts. We'll give it a go :)
