That would be a nice dish to make and can be made in advance. The cost should be minimal.

Splurge on wild mushrooms if you can afford it but it's not critical to the dish
Make your own chicken kievs. There really nice and anything you cook really would be nice. Its really cheap aswell... just buy chicken breasts.

ok Coq Au Vin is super rich and made with a good wine you will drink. So if you want to make it go for it, as for cost go to Simon delivers online and check how much for each ingredient it would cost and then divide the recipe in half if for 4 ppl and go from there. Thats your total food cost. If the food cost is to high why not make a family favorite that you all havent had together in a very long time. Bring back the memories from being together and then share stories from when you where a kid. But thats what I would do. Have fun in the kitchen
I think if you feel up to cooking it, that coq au vin would be a really nice meal to make for your parents. It's very sweet for you to want to cook for your parents. I hope it goes well for you!
Are you an experienced cook? This recipe indicates it is intermediate level, which means it's not for the novice. Having said that, for a special occasion, I wouldn't make anything I hadn't already tried making before. New recipes are for trying out on friends and family when there's not any pressure for perfection.
If you are a novice cook, keep it simple! Your parents will appreciate any effort you make! A simple pasta dish, a lovely salad, some crusty bread, a nice wine and for dessert: fresh fruit trifle. There's where you can really shine and look impressive! Just layer pound cake cubes, fresh fruit and whipped cream in a pretty glass bowl so they can see the layers. If your family doesn't mind alcohol, drizzle a little fruit liqueur over the berries in each layer, and put a bit in the whipped cream. Using a grater, grate a bit of dark chocolate over the top.
Cost: minimal, really. Time spent in the kitchen: Also minimal.

Take on a challenge, if you like, but be sure you understand what you are getting into, technique-wise.
If you are a capable and adventurous cook, then by all means try a more challenging and fancier recipe.
You want to impress them, treat them to something special, but also give them a meal that they will heartily enjoy.
You know what sort of food your parents like... so find a recipe that fits their taste and perhaps has a bit of a twist to it.

To directly answer your question, coq au vin can be delicious!
Be sure to make them a Special dessert too.
