What sides would you suggest to complete this meal?!

i would go with some braised mustard or turnip greens - sautee a chopped onion in some extra virgin olive oil until translucent. add well washed & mostly drained greens to the pot, plus about a cup of chicken broth. simmer for anywhere between 20 minutes to 2 hours (depending on how soft you like your greens) and serve. you can do this with spinach as well, just reduce the chicken broth to 1/2 cup & only braise for say 10-15 minutes tops.

Well it is snowing and cold here so I am in the mood for a big fresh garden veggie salad with fresh tomatoes.......sigh.
Parmesan Popovers
3 eggs
3/4 cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon herbs de Provence
4 tablespoons chopped parsley leaves
1 cups whole milk
3/4 cup grated Parmesan (about 5 ounces)
Preheat the oven to 400 degrees F.
In a blender, combine eggs, flour, salt, pepper, and herbs, milk, and cheese. Blend on medium speed.
Spray a mini-muffin pan with nonstick cooking spray. Pour the batter into the muffin cups, filling each cup 3/4 full. Bake until puffed and golden brown, about 20 to 25 minutes.
Remove popovers from muffin tin and cool on a wire rack.
A tossed salad and some bread, or a pasta salad.
I would serve a salad of lettuce, cucumber and tomatoes. Some french bread or any other bread. Ice Tea with lemon to drink or you can make it a little fun by serving some kind of beer!!!
Honey glazed carrots work well with limas.
