If you want quick, brown a pound of ground turkey, drain, add chopped onions & cook til soft, dump in a can of Manwich & heat. It makes a real good BBQ, & you can add more seasoning if you like. Add a green salad & corn on the cob, & you are done!!

White Chili

Turkey, white beans, onions and green chilies spiced with Mexican seasonings

Ingredients

1 pound dried small white beans
3 tablespoon olive oil
1 cup chopped onion
3 cloves minced garlic
2 cans undrained, chopped green chilies
1 tablespoon dried oregano leaves
1 tablespoon ground cumin
1 teaspoon ground cinnamon
dash ground red pepper
9 cups Butterball? Chicken Broth
4 cups chopped, cooked Butterball? Turkey or ground turkey
1/2 teaspoon salt
1/8 teaspoon ground black pepper
3 cups (12 ounces) shredded Monterey Jack cheese


Directions

1. Place beans in large saucepan or bowl. Cover with cold water. Let stand overnight. Drain and rinse beans.
2. Heat oil in large saucepan on medium-high heat. Add onion and garlic. Cook and stir 7 minutes, or until onion is tender.
3. Stir in chilies, cumin, oregano, cinnamon and red pepper. Cook 3 minutes more.
4. Stir in beans and 8 cups of the chicken broth. Bring to boil on medium-high heat. Reduce heat to low. Simmer covered 2 hours, or until beans are tender. (Note: If mixture becomes to dry, add additional chicken broth.)
5. Stir in turkey, salt and pepper and 1-1/2 cups of the cheese. Cook until cheese is melted.
6. Ladle chili into bowls. Top with remaining cheese.


Suggestions



Serve with salsa, sour cream and cilantro, if desired.

Turkey Meatloaf

A mixture containing turkey, oats, eggs, tomato sauce, onion and peppers is seasoned with honey mustard and garlic, formed into a loaf and baked.

1 1/2 lbs. ground raw turkey
1 c. quick-cooking rolled oats
2 eggs, beaten
1 c. (salt-free, if desired) tomato sauce
1 Tbsp. honey mustard
1/2 cup chopped onion
1 clove garlic, minced
1/3 c. EACH chopped red, green and yellow bell peppers
Salt and pepper, to taste1 c. barbeque sauce
Method
Preheat the oven to 350 degrees. In a large bowl combine all ingredients EXCEPT BBQ sauce. When everything is mixed well, form into a loaf shape and place in a shallow baking pan. Bake until a thermometer reaches 155 degrees. Spoon BBQ sauce over loaf and bake about 10 minutes more.

Ground Turkey and White Bean Chili

2 tablespoons canola oil
1 lb ground turkey (lean)
salt and pepper
1 large onion, chopped
2 jalapenos, seeded and minced
2 teaspoons ground cumin
1 (8 ounce) can tomato sauce
2 (19 ounce) cans cannellini beans, drained and rinsed
1 (14 1/2 ounce) can chicken broth
1 cup water
1/4 cup chopped cilantro (to garnish)
1/4 cup light sour cream (to garnish)

Heat canola oil in a dutch oven or deep skillet over medium high heat.
Add ground turkey and season with salt and pepper.
Cook until browned, stirring to break up turkey.
Add chopped onion and minced jalapeno and cook until soft, about 3 minutes.
Stir in ground cumin and tomato sauce and cook for 2 more minutes.
Add the cannellini beans, the broth and the water.
Bring to a boil.
Reduce heat and simmer until thicker, about 20 minutes.
Ladle into bowls and place a dollop of light sour cream and a sprinkling of chopped cilantro on top of each serving.

You can make anything that you usually use beef for- we use ground turkey in all of our cooking- kids can't even tell the difference, and neither can we!\
