I live in RI, American Chop Suey is made with hamburg, tomato sauce, and macaroni elbows, throw some onions in as well.

In Massachusetts we use Elbow macaroni, tomatoes (like chunky stewed tomatoes), onions and peppers and ground beef.

1 lb. hamburger
1 lg. onion, sliced
1 green pepper, sliced
2 stalks celery, sliced
4 oz. mushrooms
1 (20 oz.) can tomato juice
1 can bean sprouts, drained
1 1/2 tsp. soy sauce
Salt and pepper
1 tablespoon sugar

Brown hamburger and drain off all fat. Add remaining ingredients and simmer for 1 hour. Transfer to casserole and bake at 350 degrees for 1/2 hour.

That's interesting- I'm in Texas and we call that Goo-losh (spelling?)
Good to know! haha!

I like vegetarian chop suey..

Vegetarian Chop Suey
(best not to make too large a batch because the cornstarch breaks down over time).

1/2 lb. tofu (cubes)
soy sauce
vegetable oil
2 cans (28 oz each) chop suey vegetables or 1 can each of chop suey vegetables and bean sprouts
5 TBSP. cornstarch
1/2 lb. fresh mushrooms

Cut tofu in 1/2" cubes (or buy it that way). Dip in some soy sauce for color and pan fry in vegetable oil until brown. Drain off excess oil. Set aside.

Wash mushrooms, slice with egg slicer or knife. Set aside.

Drain juice from canned vegetables into a saucepan. Add cornstarch. Mix well. Cook, stirring constantly until thickened and clear.

Put vegetables, mushrooms and tofu into a saucepan. Add thickened juice. Cook until vegetables are just tender. Serve over rice. Season with soy sauce. Chinese noodles can be added on top if you like.
