What can I cook with my few veg items?!?!


Question: Ok firstly - Im a student, so have limited cooking abilities and money!
BUT, I buy a local bag of veg each week which contains 3 large carrots, a handful of potatoes, 3 onions, a swede, and a huge green cabbage.

WHAT can I make with these ingredients?! We have a few dried herbs inthe house - basil, chives, etc. and I have stuff like bacon, eggs, butter, cheese, soup, beans, etc. (The usual student food items!!)

So does anyone have any suggestions on what I could make with my little selection??

Chop everything up in similar size pieces. Fry over medium heat in olive oil with garlic. Then pour in some beaten eggs. Cook on low until eggs are set. Instant frittata!

Or omit the eggs and sprinkle some grated Parm on top when the vegs are done, keep them on the almost-crisp side.

But you MUST include garlic or it will all taste blah.

You can use any combination of vegetables. When it comes to veggies, everything goes together (except beets!)

P.S. When you fry everything up, put about 1/4 of water in the pan and then cover until the vegs are done.

I love skillet fried cabbage.

i'd chop up all the vegis and put them in a pot with water and your favorite seasonings. boil. eat.

my favorite thing to eat is sausage with cabage and carrots and squash. i boil them with onion and garlic, and jalapeno.

Stir fry is always a safe choice because you can throw almost anything in.

You could always go with something with or in rice or pasta and just add whatever you want to that.

I'd chop everything up and add it in a pot with some chicken broth.

You can also fry the potatoes and have "home fries" with your eggs and bacon in the morning.

Or, you can make a baked poato and load it with cheese, butter, sour-cream, bacon bits, chives, whichever you'd like.

I like Southern Fried Cabbage, so you can fry it and eat it as is or add some Ham with it.
