I have ONE overripe banana...what should I do with it?!

You could freeze it until you make up your mind-they freeze perfectly.

I've done that...mmm...then instead of syrup...use butter and powdered sugar!!
Ooh, even better idea...mash it into some pancake batter and add chocolate chips! Tasty!! : )

This may sound weird but I crave it when I'm sick.

Smashed Banana

One banana
Sugar to taste

Peel banana and put on a plate. Smash with fork tines till mushy. Add sugar to taste and smush some more. Enjoy!!

BRAN MUFFINS

1 c. wholewheat bran
2/3 c. milk
1 c. all purpose flour
1/4 c. sugar
1 tbsp. baking powder
1/2 tsp. salt
1/4 c. shortening
2 eggs, beaten
1 c. overripe mashed bananas, 2 medium

Preheat oven to 425 degrees. In small bowl combine bran and milk; set aside. Grease 12 (2 1/2 inch) muffin cups. In medium bowl combine dry ingredients mix well. Cut in shortening until mixture resembles coarse crumbs.
Stir eggs into bran and milk; add along with mashed banana to dry ingredients stirring just until moistened. DO NOT OVERMIX. Spoon batter into pan, filling each cup 3/4 full. Bake 20 to 25 minutes.

Cool 5 minutes in pan before removing. Makes 12 about 145 calories each.

FRUIT SMOOTHIE

1 c. plain low fat yogurt
1 overripe banana
1 c. ice cubes
1 c. strawberries or other fruit

Combine all ingredients in blender. Blend until smooth. Serve immediately.

Make a small loaf of banana bread, get you favorite recipe and cut it in half. Usually a regular recipe will call for 2-3 bananas, one should do a half recipe nicely.

Banana Butter

4 ripe bananas
2/3 cup sugar
3 eggs
90g butter, cut into small cubes
1/4 cup lemon juice
1 tablespoon lemon rind
1/2 cup orange juice
(a few drops of yellow food colouring)


Fill 2-3 glass jars with boiling water to sterilize (Boil 10 minutes, then dry in oven if you plan to store the Butter a long time).

Crack the eggs into a bowl and whisk well. Strain through a sieve into a microwave-safe bowl - glass is best.

Peel and mash the bananas, and discard any stringy or 'brown bits'. Add them to the bowl of egg.

Add the sugar, butter, lemon juice and rind, orange juice and food colouring
Stir to combine, then microwave on High for 2 minutes.

Whisk the mixture, which will start to set around the edges of the bowl, then microwave a further 2 minutes. Continue in this fashion until the mixture is thick and setting well - but take care not to let the mixture boil as it will separate and be no good.

Pour into glass jars, put the lids on and store in the fridge.

This sandwich may sound unappealing, but it's actually very tasty, especially on cold winter days! Legend has it that this was a favorite of The King.

INGREDIENTS
3 tablespoons peanut butter
2 slices white bread
1 banana, peeled and sliced (or mashed)
3 slices cooked bacon
1 1/2 teaspoons butter


DIRECTIONS
Spread the peanut butter on one side of one slice of bread. Top with sliced banana, then slices of cooked bacon. Cover with the other slice of bread. Spread butter on the outside of the sandwich.
Heat a skillet over medium heat. Fry the sandwich on each side until golden brown and peanut butter is melted, about 4 minutes total.

Freeze it.
It is good for Banana Bread, Already frozen for your smoothie. In a protein drink.

Do this Asian dessert - mash the banana, add plain flour, egg, sugar - mix them well. Deep fry it, using a tablespoon per scoop till all is used up. Serve hot. Its super yummy

Peel, slice and freeze it in a ziplock bag.

When frozen, blitz with some buttermilk/milk and voila - banana ice cream.

NB - if the banana is really really ripe, there is no need for any sweetener, but judge accordingly.
